Fear of Flying? Take Control

If you’re afraid of flying, you’re not alone. I’m not one of those people, but I know a lot of them. Over the years, I’ve come to the conclusion that empowerment is the key. People are afraid to fly, because they feel a loss of control. They know commercial air travel is safer than driving to the airport, but they are driving themselves to the airport. On the plane, they are handing over control to a stranger.

We can talk till we’re blue in the face about how much safer air travel is than driving, but that doesn’t help those people who are afraid. This is one of those situations in which knowledge is power. People can feel more confident about flying if they have a plan.

I’m not going to get into the detailed engineering of jet engines. You don’t need to know a lot about the thrust of jet engines, but here’s the basic info:  Jet engines suck in air through a fan in the front. The high speed blades in a compressor raise the air pressure, and gas is added. As the mixture expands, it shoots out the back of the engine, causing the jet to thrust forward. Simple. What you really need to know is how you can take control of your own situation, so I’m going to tell you. I wrote a blog recently about making air travel easier. For the most part, it was about eliminating stressors leading up to the flight.If you start with eliminating the stressors of the airport, it’s easier to stay calm. Now I’m going to tell you some things that might help eliminate some of the fear of actual flying.

AIRLINE TRAVEL IS SAFER THAN EVER USA Today ran an article in April, after a Southwest emergency, with this headline:

Wow. That should make us all feel a little better. You can read the article here.

KNOWLEDGE IS POWER This is the absolute truth. Since you won’t be flying the aircraft, you don’t need to know how to fly it. The knowledge you need is how to react in an emergency and some calming techniques. In an emergency, we want to be able to get out of the aircraft quickly. I was a flight attendant for a while after I graduated from college. I know it is highly unlikely you will ever have to evacuate an aircraft. Here’s something else I know: accidents are survivable, especially if you have information that will help you get out.

  • When I board an aircraft, the first thing I do is look for the nearest exits…which may be behind me.
  • Count the number of rows between yourself and the two nearest exits. If something happens, and it’s dark, you need find your way out by touch. Even if you are unable to see, you can touch seatbacks and count your way to the exit.
  • Pay attention to the safety demo/video and review the safety card before takeoff. It will make you feel better to see how the exits work. Often, that information is included in the safety card in your seat back pocket. You can see American Airlines’ safety video here. A Delta video is here, and United’s is here. I love the United video. Keep in mind these are samples; different aircraft have different procedures…pay attention.
  • Wear comfortable shoes and natural fabrics. Synthetic fabrics tend to be more flammable, so wear natural fabrics like cotton. Also, wear shoes in which you can move quickly.
  • Fasten your seatbelt low and tight around your hips, decreasing the likelihood you will be injured in an emergency.
  • Keep both feet flat on the floor for takeoff and landing, decreasing the risk of back injury or leg injury in an emergency.
  • Make sure all bags in your row are completely underneath the seats. You don’t want to trip over something if you need to get out quickly.
  • When I travel with my daughter, I tell her, “If there is an unlikely emergency, do exactly what I tell you without hesitation. If I can’t get out, you go without me.”
  • In the unlikely event of an emergency, leave all your belongings behind! The more things people try to carry, the more difficult it is to get people out.
  • If you must take anti-anxiety medication (or have a cocktail) when you fly, take the lowest dosage possible for relief. Less medication/alcohol means you can react more quickly if necessary.
  • If you still can’t relax, try soft music (even classical?) on some earbuds, or watch a lighthearted movie. Play solitaire. Read a book or magazine. But don’t wear earbuds during takeoff and landing; you want to hear any instructions if needed.
  • My trick for calming myself in other situations is to stop and use my senses: think of something I can hear; think of something I can see; think of something I can touch; think of something I can smell. Putting myself through that thought process can take my mind off the situation.
  • Another calming trick is to find something to count. Count passengers. Purchase boxes of candies in the airport, and count the candies in each box…slowly. Counting is a good way of forcing yourself to think about something else besides your anxiety trigger.
  • If you are traveling with children, remember your children pick up on your body language. If you’re anxious, they become anxious. Try to calm yourself.

Here is some information about aircraft cabins you might find useful:

  • Often, the electronic pings you hear are simply passengers using their flight attendant call buttons, flight attendants trying to communicate about drink cart needs, etc.
  • Soon after takeoff, there is often a thud sound as the landing gear is raised back into the underbelly of the plane.
  • Many times, after takeoff, you will notice the aircraft seems to slow down a little. It might be due to noise ordinances over a city or another request by air traffic control. This is normal.
  • Often, when items shift in the galleys, you will hear them banging around.
  • Passengers sometimes slam doors when they go into the lavatories. You may be surprised by the sound. And sometimes you hear the flush.
  • If you have a drop of water fall on you, it is likely condensation from the air conditioner.
  • Sometimes, landings are just a little jarring, because the pilots are compensating for crosswinds on landing. No big deal.

Hopefully, this calms some of your fears. I feel better about situations in life if I have a plan for mishaps. When I drop my child somewhere, I tell her, “If there is a fire alarm or active shooter situation, get out of the building fast. Call me after you get to a safe place.” If I’m in the building too but not with her, she knows to get out first, then call me. And for years, we’ve reviewed the “stranger danger” plans.

Try to arm yourself with the knowledge you need to survive an emergency and some calming techniques, and you will likely feel better about flying altogether. Making Airline Travel Easier

Airlines have received a lot of press in the past year or two. From dragging passengers off the plane to perverts sitting next to unaccompanied minors…we’ve heard it all. The latest press is all about paying extra for good seats and having difficulty getting seats together without paying extra for them.

A lot of people travel more frequently than I do, but I used to work in the travel industry, and I fly pretty often. I’ve learned a few things along the way that can make your life easier when traveling by commercial airline.

TSA PRE-CHECK/GLOBAL ENTRY Travel a few times a year domestically? TSA Pre-Check is worth the money. Surely, you’ve stood in the regular line and watched people zip through the TSA Pre-Check line. For me, the biggest benefit, aside from expedited screening, is not taking off my shoes on that nasty airport floor, but there are others: you don’t have to remove your laptop or small liquids from your bag, and you don’t have to go through that body scanner. It costs $85 for five years of TSA Pre-Check. Apply online here. After applying online, schedule an appointment online and take documentation to a processing center to complete the process. When I went, I was there for less than 10 minutes. If you travel internationally more than once or twice a year, consider Global Entry, which is “a U.S. Customs and Border Protection (CBP) program that allows expedited clearance for pre-approved, low-risk travelers upon arrival in the United States. Members enter the United States through automatic kiosks at select airports,” according to their website. It is $100; learn more by clicking here.

RESERVATIONS Two words: BOOK EARLY. It gives you the best possibility of getting a good fare and desirable seats and increases the chances of sitting with friends/family. Over the past few years, airlines have started charging extra for more desirable seats near the front of the cabin. I am most familiar with American Airlines, because they have a hub in Charlotte.

According to an interview (conducted in a Boeing 777) with American’s CEO in the Wall Street Journal, “American’s strategy now is to offer passengers more seating choices—a strategy seen clearly from Mr. Parker’s seat in the back of the reconfigured 777. Those interested in low fares sit in the back, where American has 146 basic coach seats. If you’re willing to pay more or have elite status, 66 coach seats provide extra legroom. You can pay several hundred dollars more and move up to premium economy: 24 seats that are 19 inches wide instead of 17 and have 38 inches row to row. Then there are 37 lie-flat business-class seats. Nearly half of the plane’s 273 seats offer extra room.” You can see the article here.

The lowest/most restrictive fares they offer are called Basic Economy. They are in the back of the plane. There are several restrictions, but the biggest one, in my opinion, is that you cannot get seat assignments till check-in, and for me, that is a big red flag. I don’t have a problem with American offering Basic Economy, but there is no way I would knowingly go to the airport without an advance seat assignment.  If you do not have an advance seat assignment, there is a greater likelihood you will be stuck with the “leftover” seats or be bumped from the flight. However, according to a friend who is an industry insider, airlines aren’t overbooking like they used to, so the possibility of being bumped is much lower. (If you do get bumped, according to my insider, you can get “sweet” compensation in the way of vouchers that are good for two years…can be used for flights or upgrades.) Traveling as a family and want to be together? Book Main Cabin or better. Whatever you do, get advance seat assignements or pick a different flight. If you are unable to book seats together, try to book aisle seats and/or window seats for leverage. Aisle seats are prized, and if you offer someone a middle seat in exchange for an aisle seat, the answer will be, “No dice.” That being said, here is a trick to use if your child is seated next to a stranger: Walk the child to his/her seat. When buckling up your child, get the airsickness bag out of the seat back pocket. Open it. Hand it to your child, and say, “Honey, when you get sick, make sure you use this bag.” Do not whisper it. You want the person next to your child to hear. They will likely offer to trade seats! Whatever you do, do not ask your flight attendant to assist you in trading seats with someone. People booked early and likely paid more for their seats. Usually Main Cabin seats are about $20-$50 more (on American and United) than Basic Econ. If you can do Main Cabin, do it. With Main Cabin, you get advance seat assignment, overhead space (none with Basic Econ), and you can change your flights for a fee…not with Basic Economy. I prefer to think of that additional $20-$50 as the regular price and look at Basic Econ as the no frills, discount price. You can see a great skit from The Carol Burnett Show about a No Frills Airline here. It puts things in perspective with humor. Maybe airlines should show that skit on a monitor in the gate area.

UNACCOMPANIED MINORS  Need to send your child on a flight unaccompanied? Arrive at the airport at least two hours before the flight. I’d have to be there three hours before for peace of mind. You will have extra paperwork, and you will need the full name (as it appears on ID), address, and phone number of the adult meeting your child. (That person must have ID.) You will be required to get a gate pass and walk the child to the gate. Before saying goodbye, remind your child to know where exits are, pay attention to the emergency demo, and if he/she is uncomfortable with their seat mate, let the flight attendants know. You can see me discussing this with my friend, Maureen, on Been There Moms here. Also, plan to be at the airport for a while; you are required to stay in the gate area till the plane is off the ground…not when it leaves the gate. You must wait until the gate agent tells you the plane is in the air.

CHECK BAG RESTRICTIONS before you pack. You already know there is a weight restriction for a checked bag, but did you know there is also a size restriction? Check your airline’s website. You do not want to be told at the airport your bag is too heavy or too large. While you’re at it, check carry-on restrictions. In American’s Basic Econ, you only get to carry on one bag that will fit underneath the seat in front of you. For Main Cabin, you can have two…one under the seat and one overhead.  ***And while we’re talking luggage, take a picture of all checked bags before you check them. If they don’t arrive when you do, you will have a picture to show the baggage agent. Also, hang on to your claim checks till you have your bags in hand. If you’re like me, it might help to take a picture of your claim checks too.***

CHECK IN EARLY You’ve heard it a million times, but people don’t take it seriously. Arrive early! I check in online, but still, I prefer to get there two hours before domestic flights and three hours before international flights. Folks may call that extreme, but  I’ve never missed a flight or panicked at security, wondering if I would make the flight. Make it easy on yourself; arrive early. You never know how long the lines will be. Why risk the stress? Using Mobile Boarding Pass? Take a screen shot of it beforehand, so you can access it quickly. I always print mine. My husband and I saw a couple in Miami struggle for five minutes trying to pull up their boarding passes on their phones. Once you clear security, it’s time to go relax and wait. I have TSA Pre-check, but I still arrive extra early, giving me time to relax or check email before boarding.

RELAX AND ENJOY YOUR FLIGHT Once your group number has been called and you have boarded, relax. Enjoy the flight. Maybe you try to sleep or catch up on emails (if WiFi is offered). It might mean playing games on your phone or reading a book or magazine. Just relax and let the professionals do the work.

Back to Reality

Ahhhh…vacation. If only we could feel as relaxed in daily life as we do on vacation.

We returned last night from what is likely the last big vacation of the summer for us. I love vacation. I love vacations of all kinds…active, outdoors (but not camping), water, city, lazy, big, small…just vacations in general. I love visiting new places and familiar places.

This most recent trip was to a familiar place, Los Angeles, but we had people with us who had never been, so everything old was new again. We had a great time…three moms with three teenagers. One mom was my awesome sister-in-law, whom I adore, and the other was my college friend, Angela…also adored. As we all started to depart the hotel yesterday, I could feel “reality” hanging over our heads like a fog.

I always get a little sad when I know the final big trip of summer is over. This year, because of high school sports, the final big trip of summer had to be a little earlier. (Note that I keep saying our final big trip, because I keep hoping for a couple of small adventures.) Our daughter is starting 9th grade and trying out for high school teams this year. Those tryouts start in early August, so no more vacations…back to reality.

Reality means it’s time to start getting prepared for the next school year. I get queasy just thinking about it. I don’t know if my daughter is nervous at all, but I am. It happens every year, but this year, more so, because she is going to high school. I’ve never had a child in high school, so this is a new experience for us. Deep down, though, I know she will settle in just fine, and eventually, I will settle down.

The most immediate thing on the horizon is the “assigned summer reading.” That is reality at our house right now, and that is the part I do not like. It’s not really my reality; it’s my daughter’s reality, but I will have to listen to her complain about it. I’m not the mom who helps with homework or nags about assignments. Most of the time, I don’t even know what the assignments are…and that’s how I’d like to keep it. I’ve talked with my friend, Maureen Paschal, about assigned summer reading on Been There Moms. You can see the video here. I simply do not like assigned summer reading. I feel like it is encroaching on my family time, and it’s like a cloud hanging over summer for us. I love to read, and I hope my daughter will eventually love it too, but even as a reader, “assigned” reading was tough for me as a student. At some point in the next couple weeks, she will take a couple days to sit down and read that book. She will complain about it, but she will get it done.

Personally, I think, if the school is going to require summer reading, I think they should also require outdoor exercise. There are some students who love reading all summer, and there are some who enjoy being outdoors all summer. Sure, there are some who fall between the two, but my daughter loves moving around and being outdoors. Sitting still? Nah. There’s no fun in that. But I really believe that if the school is going to have assigned summer reading, they should also have required outdoor exercise hours. If we are trying to enrich the whole student, let’s build their minds and their bodies.

Another reality is getting prepared for my daughter’s freshman year, meaning I need to make sure she has everything she is going to need. Right now, though, we are one month out from the first day of school, so seeing school supplies in the stores just makes me nauseous. I will get everything in advance with time to spare, but I don’t look forward to it.

And then there’s this reality: a month of back to back trips means things in my closet (and my home) are in disarray. I came home from the beach in June, and I’ve had several back-to-back trips since. I won’t get into listing all the places we visited, but it has been a lot of packing, unpacking, and packing again. And in some cases, I didn’t even unpack and repack…there wasn’t time. I just packed other stuff in a different suitcase. I need to take the time to straighten out all that, and it is one of my least favorite things to do. It means pulling out everything from closets around my house and purging. I’ve found some good “purging” advice in an article from the Huffington Post here. I dread it. But I will do it…maybe while my daughter is doing her assigned reading!

Today, though, I choose to ignore those realities. I want to enjoy the last fun, lazy days of summer…hanging out in the pool, spending time with family, harvesting tomatoes, spending time outdoors, and possibly, taking a little road trip or two. I’m on my way out to the pool now…

 

My Favorite Social Experiment

The American South and Midwest have reputations as friendly places, while the West and Northeast have reputations of being less so. On another note, people in the West are perceived as creative, and people in the Northeast are perceived as less inhibited. A 2013 study by the University of Cambridge supports that. You can see the results of the study here. After reading that today, I started thinking about our own little social experiment we conducted in Beverly Hills a few years ago.

Southern California: beautiful weather, beautiful people, good food, creativity, and good people-watching. My daugher and I love to go. We’ve been, as my mother used to say, “umpteen times.” That means we’ve been a lot. Today, we are embarking on another adventure to the Los Angeles area. We love visiting. Is it different than other parts of the country? Yes, and that’s part of what we love. Different parts of the country have different cultures and different attitudes, and that’s a good thing. How boring would our country be if there weren’t differences? Why bother visiting another place if that’s the case?

We love visiting the LA area, but would we want to live there? The bloom might fall right off the rose if we lived there. I’ve had to explain to my daughter on more than one occasion that living there isn’t the same as visiting. If you live there, real life gets in the way. Plus, you don’t live in a hotel with fantastic room service, and really, that’s part of the charm.

The first time I took her to LA, we were standing in line at a coffee shop, and my then 7-yr-old daughter looked up and said, “I want to live here, Mom.” The lady behind us heard her and leaned up to say, “Oh, honey. You don’t want to live here. People aren’t nice here like they are where you’re from.” Maybe she heard the southern accent? I had to take a few minutes after we sat down to explain that there are lots of nice people in LA, but I thought the lady meant they don’t wave to everybody and speak to everyone on sidewalks like we often do.

My friend, Mary Ann, who lives in Mobile, Alabama, and her son went with us on our next trip to the area. One day, as we were walking to breakfast at a restaurant about a mile from our hotel, we decided to conduct a social experiment by saying “good morning” to everyone we met on the sidewalk. We got all sorts of responses. Some people gave us sideways glances and moved farther away on the sidewalk, clutching their bags more tightly as if they thought we were trying to mug them. Others ignored us altogether. But there were three who were thrilled. One said how refreshing it was. Another hugged us and thanked us. And yet another had an entire conversation with us, starting with, “You’re not from around here, are you?”

We felt pretty sure we would get different results in the South.

We came home to Charlotte and tried the same Good Morning Experiment at our local Neiman Marcus, thinking the socioeconomics would be closest to Beverly Hills. About two weeks after the initial “experiment,” my daughter and I strolled through Neiman’s, and I greeted everyone we encountered with “Good morning!” My daughter didn’t even notice, because I do it all the time. Here’s what happened: no one looked at me like I was going to mug them. Every single person smiled, and most responded with a pleasant “good morning” in return. One had two gifts in her hand for her young daughter and stopped my daughter to ask which one was better for a young girl. Two or three complimented my shoes. And not one person looked at me like I was strange for greeting them.

I considered trying it in my favorite Target store in Charlotte but realized it wasn’t necessary. I speak to everyone in there every time I go anyway. I’ve even made friends in Target!

On our next visit to LA, we were with friends from the Northeast. We hadn’t discussed the social experiment. We were having breakfast in a restaurant one morning when a gentleman walked past our table on his way to the deli case and smiled. I smiled back and kept talking. When he passed again, he smiled again. I smiled and gave a little wave…it’s what I do. Apparently, he walked past two more times, and I smiled back without even realizing it. As we were leaving, he stopped me at the door. He told me he and his wife were dining in the back of the restaurant and decided to see how many people smiled back when he walked to the deli case. He said, “I smiled at every person at every table I passed, and you were the only one who smiled back. Not only did you smile every time, you waved!” I told him about our previous social experiment, and we all had a good laugh.

I’m not saying I’m always friendly and in a happy mood, and everybody in Charlotte isn’t always friendly either. The “results” of our “experiments” were interesting, though.

That’s not to say there aren’t friendly people in LA. I know some fabulous, friendly people who live there, and I hope to see them when we are there this time. Every time we go, we meet delightful people…every time…LOTS of great people. We’ve met people who treated us like old friends or family. We’ve met people who have welcomed us to their city with open arms…lots of fantastic people.

I can hardly wait to introduce our “newbies” to the places and people we love, and I’m looking forward to spending time with this fun group. We won’t be the most beautiful, skinniest, or most wealthy people in the city, but we can try to be the happiest and most friendly!

Maybe we will conduct another social experiment of some kind on this trip. Ideas?

My Favorite Simple Summer Sandwiches

Sometimes I just want a sandwich…makes an easy snack or even a meal…no standing over a hot stove in summertime.

A personal favorite is the tomato sandwich…only good in summer…and only good with homegrown tomatoes ripened on the vine. Grocery store tomatoes may be beautiful on the outside, but rarely on the inside…hard and yellow…no thanks. The perfect tomato sandwich is made with white bread and has slices of vine-ripened, red tomatoes with Duke’s Mayonnaise and a little salt and pepper.

My daddy loved tomato sandwiches, but he also loved banana sandwiches and pineapple sandwiches. I’m not a fan of either. Actually I’ve never eaten either, but white bread + mayo + pineapples/bananas…just doesn’t sound good to me. I have cousins who love them, though.

Daddy loved peanut butter, but he liked Peter Pan brand. I prefer Jif. Remember “Choosy Mothers Choose Jif”? I could likely live on PB and bread. There are some other spreads that work well with PB, though…jelly is one. But I love Marshmallow Fluff brand marshmallow creme on peanut butter sandwiches. It’s called a Fluffernutter. If you’re not familiar with it, you should be. You can see a Fluffernutter commercial here. My friend, Lisa, who lives in Luxembourg, claims I caused her to gain ten pounds after introducing her to Fluffernutters. Using white bread…put peanut butter on a slice of bread, and put Fluff on the other, mash together, and voila! The Fluffernutter! While peanut butter has nutritional value, Fluff has absolutely none.

For years, airlines have handed out packets of Biscoff Cookies, and I’ve always loved their crunchy, caramelized flavor, so when I heard they made Cookie Butter, I was all over that! My college friend, Beth, introduced me to it. As soon as I saw it, I had to have it. Add that smooth caramelized cookie butter to a peanut butter sandwich, and it takes on a whole new flavor. It’s a flavor that will keep you coming back for more. They make a creamy version and a crunch version. You can purchase it in Target or order online here.lb150816_1.png

There is one more flavor I love with peanut butter: maple. It’s not just for winter anymore. You can purchase maple butter/cream and add that to a peanut butter sandwich. I love pure maple flavor. I used to order maple candies/cookies them all the time but had to stop, because well, sugar. I couldn’t eat them in moderation. If you don’t want to go to the trouble of ordering separate maple butter or cream, Jif makes a Maple Flavored Peanut Butter that is really good too. I used to purchase it in the grocery store, but I haven’t been able to find it for a while, so I ordered it through Amazon. I had to order it in an 8-pack, but I know we (I) will eat it. It’s not just sweet flavors I like. I also love pimiento cheese spread. There are different spellings…some spell it “pimento”…but oh, how I love it. My mother used to make it  when I was a little girl, and I would help her, but back then, I didn’t want to eat it. As an adult, I love pimiento cheese spread. In the south, we pronounce it “pimenna cheese,” and I’ve even seen it on a menu spelled that way at Smashburger in Atlanta. I have a good recipe, but it’s labor intensive. There are so many good brands of pimiento cheese sold in stores now, so I just buy it. My personal favorite is Palmetto Cheese from Pawley’s Island, South Carolina, and I really love their jalapeño flavor. My friend, Linda, loves the Harris Teeter brand, and I have another friend who loves Queen Charlotte’s Pimento Cheese. Yet another friend tells me Augusta’s is her brand of choice…apparently, they make the famous pimento cheese sandwich for the Master’s in Augusta, Georgia. You can make a sandwich with just bread and pimiento cheese spread or add it to white bread with homegrown tomato slices and cook it like a grilled cheese sandwich…it’s what dreams are made of. All those brands, except the Harris Teeter brand, can be purchased at Reid’s Fine Foods in Myers Park in Charlotte or at their South Park location.

And then there’s my favorite chicken salad that can be “spread” onto a sandwich. I make my own, and it’s super easy and healthy. I simply stir together some canned chicken (yes, canned…drain off the water) with a little Duke’s Mayo, some mustard, and some dill relish, adding some salt, pepper, and a little Lawry’s Seasoned Salt. It turns out delicious every time. It makes great sandwiches or cracker toppers, or you can eat a scoop of it over a bed of lettuce. MmmmMmmm good.

In fact, I could put all these different spreads on a scheduled rotation and enjoy a different sandwich every day.

It’s National Mac & Cheese Day

Today, July 14, is National Mac & Cheese Day! I have loved Mac & Cheese since I was a little girl. Back then, I loved Kraft Mac & Cheese, and while it will do in a pinch even now if I add some real cheese, I have my very own beloved Mac & Cheese recipe that I prefer when I have time. I used to call it Protestant Mac & Cheese, because it’s perfect for a covered dish lunch at a church gathering in the South.

I love to cook but don’t do it every day. When I do, I love to make Mac & Cheese, so today, I’m sharing my very favorite personal recipe in honor of National Mac & Cheese Day! Enjoy!

Serves 6.

INGREDIENTS:

  • 3 TBSPNs butter or margarine, divided (I always use salted butter)
  • 1/4 cup flour
  • 1 TSP salt
  • 2 cups milk
  • 1/4 pound Velvet Pasteurized Cheese Product, cut up
  • 8 ounces Colby Cheese, grated
  • 8 ounces Sharp Cheddar, grated, divided
  • 2 cups elbow macaroni, cooked, drained
  • 1 sleeve Ritz crackers, crushed into crumbs

DIRECTIONS:

  1. Preheat oven to 350 degrees
  2. Melt 3 tblspns of the butter in large saucepan on low heat.
  3. Blend in flour and salt, cooking and stirring for one minute.
  4. Gradually add milk; cook stirring constantly, until thickened.
  5. Add prepared cheese product plus the Colby cheese and 4 ounces of Sharp Cheddar, stirring until melted.
  6. Stir in macaroni.
  7. Pour mixture into lightly greased 1-1/2 quart casserole. Sprinkle with Ritz Cracker crumbs and remaining Sharp Cheddar
  8. Bake at 350 for 20 minutes or until thoroughly heated.

She’s Home

My 14-yr-old daughter is home from her two-week adventure in Iceland. She doesn’t even seem tired after hiking, backpacking, rafting, sleeping outside, and all the other stuff she did.

I admire her and all the kids who did this challenging trip. I couldn’t do it. Well, I suppose I could, but I wouldn’t want to…tent sleeping = deal breaker. She said Iceland is a beautiful country, and she had a great time, but she did miss talking with us.

I totally get that. First, I missed her more than I knew I could miss someone. My husband and I said it to each other several times a day, “I miss our girl.” We could hardly wait for her to return, especially as I stood at the airport waiting for her plane to land. It seemed like forever. I was excited at that point, but time moved slowly, like waiting for Santa. Another reason I understand is that I visited Mexico with school friends and a teacher when I was fourteen, and we all experienced some homesickness. The difference? I could call home. Back in the 1980s, calling the US from Mexico was expensive, but my parents were OK with it. I didn’t call every day, but I did call a couple times…especially when I was homesick.

So, yesterday, I stood outside customs/immigration with my big sign, “Welcome Back!” I listed the girls’ names at the bottom. Waiting. The lady next to me was waiting for her grandson to come in from Iceland too, so we distracted each other.

After clearing customs/immigration yesterday, my daughter and her friends looked happy and relaxed. We did not cry (whew!), but she jumped into my arms. We did a group hug with her friends whose moms weren’t there. I was elated to see all of them! I asked them if they’d like to get something to eat before we got on the flight back to Charlotte. They opted for chicken nuggets, fries, and a Frosty from the airport Wendy’s.

On the plane, she asked me if I had missed her, and that’s when I cried. l told her she has no idea how much I missed her…and she doesn’t know, because until she has her own child who goes off on a two week trip with no communication, she will not be able to understand what it feels like to send your precious child 2,500 miles away. Think about that…I wouldn’t put my dog on a plane with someone to go 2,500 miles away. I wouldn’t send any prized possession on a plane with someone to go that far away.  Yet, we had to let her do this trip. And there will be more trips. There will be more experiences.

After we got home yesterday, a friend came over, and as we were talking, I told her how desperately I missed my daughter while she was gone and how it gave me a new appreciation for my parents’ experience. They must have missed me like crazy when I was gone too. At least when she goes off to college, she’ll be able to pick up the phone and call. As for this trip…I’m thrilled she had the experience. I know she learned a lot about Iceland but even more about herself and her ability to persevere. But honestly, I don’t want to be anywhere that I can’t call home for two weeks. In fact, I don’t think I even want to be at a posh resort in a beautiful setting with fun things to do and fabulous food if I can’t call home whenever I want! We are a talking family.

We want her to be independent, and that’s why we let her go. We’re already planning next summer. Will she do another one of these trips? I don’t know. If she wants to do another one, of course she can.

We are thrilled to have her home. She’s my favorite child.

Forgiveness

Today, I was looking through Facebook while I was sitting in an airport, and a friend had posted a video about forgiveness. The video is really good, and I will tell you where to find it in a minute. When I boarded my flight, I couldn’t stop thinking about that video and what it meant. It was in my brain! “Forgiveness” is a word we hear all the time. There are lots of quotes and Bible verses about it:

The weak can never forgive. Forgiveness is the attribute of the strong.–Mahatma Gandhi

It’s one of the greatest gifts you can give yourself, to forgive. Forgive everybody.–Maya Angelou

Forgiveness.

The video I saw is on a Facebook page called Have a Little Faith. And the speaker in the video is a woman named Nadia Bolz-Weber, who is described on the site as “a feminist, no-nonsense Evangelical Lutheran pastor who will blow you away with her honesty, hilarity, and plenty of ‘holy sh*t’ enlightenment.” Wow. I’m not sure I would have found her at all except for the video my friend posted. You can see the video here. She says forgiveness is not about “niceness.” She says holding onto anger “feeds the evil.” She encourages us to think of forgiveness as “snapping the chain that connects us” to the evil. It gives us freedom. Free people are not chained to resentment. While she has an unconventional approach, I like what she has to say about forgiveness.

It’s a simple concept, really. Choose forgiveness. Find a way to choose forgiveness. It’s not a sign of weakness. Instead, it is a sign of great strength. It can be difficult, but it’s just like most things in life…the more we practice, the better we become at it. It is a choice, and for me, it is a choice that I make not so much for the other person as for myself. I simply cannot be tethered to anger. It will suck the life out of me.

In my 51 years of life, I have offended many…usually unintentionally, but sometimes, it was intentional. Most of the intentional offenses occurred in my younger days…usually in response to a perceived transgression against me. There’s that “chain” concept. As I’ve grown older, I’ve learned a lot more about forgiveness. Frankly, it’s a lot more fun to forgive. Holding on to anger or hatred is exhausting. And seeking revenge is exhausting too. All that anger only hurts the person who harbors it. I’m not that person.

Of course, there are some people who just can’t forgive. I don’t think there’s anyone I haven’t forgiven. There are people I don’t want to spend time with, because of personality or value differences, but as far as forgiveness, I have forgiven. I don’t harbor anger toward anyone. Well, I can’t think of anyone toward whom I harbor anger. If I can’t think of anyone, I guess that means there’s no anger.

Yet, there are people who, I’m sure, haven’t forgiven me for perceived transgressions over the years, and I have a way of handling that: I forgive myself. As long as I have offered a sincere apology, I forgive myself and move on. That’s because I truly feel that if someone is incapable of forgiving me, then I don’t want to be friends with them anyway. I don’t need to be chained to them. So I move on without regret. My 14-yr-old daughter once summed it up this way to me, “Mom, when you’ve offered a sincere apology, you’ve done everything you could do…especially for something unintentional. Let it go. There is nothing you can do about it now. But you have to forgive yourself and move on.” She is right…the wisdom of a 14-yr-old. I wasn’t always able to do that, but fortunately, I learned a way. Remember the Serenity Prayer? “God grant me the serenity to accept the things I cannot change, courage to change the things I can, and the wisdom to know the difference.”

My mother had the Serenity Prayer framed in several rooms of our various homes as I was growing up. A favorite was one that matched our kitchen wallpaper in Spanish Fort where we lived from 1975 to 1977. It looked like this, except hers was in a nicer frame:

Years ago, my dad was talking with a friend whose sister had gone through a bitter divorce. For years, she had harbored hatred and resentment toward her ex-husband. But one day, she let it go. Her brother told it this way: It was like she was swimming down a river holding a big pack of gear. The pack was heavy and cumbersome. She was working so hard to hold on to the pack that she couldn’t see the beautiful foliage, birds, and other wildlife on the banks of the river. She was missing it all. Eventually, she was too tired to hold onto the pack. She let go of the pack and started swimming with ease. Suddenly, she noticed the beauty of life around her.

There are some people who want to carry anger. That’s their choice. I choose not to carry that load. I choose to see the beauty life offers. I choose joy over anger, but we all live differently. We also all sin against God and against each other every single day. If you think you don’t, you are lying to yourself. Because I know how to forgive, I live a life of peace. I try to remember this: “He that is without sin among you, let him first cast a stone at her.”–John 8:7.

If someone can’t forgive you, as my daughter says, “That’s on her/him.” And she’s right.  Thank God for the wisdom of a 14-yr-old.

I must have done something right.

Relaxing…Without Kids

As I type, my husband and I are on vacation near Miami. My brother and sister-in-law have been with us for the past few days, but they left this evening. We didn’t bring our daughter, and they didn’t bring kids either.  We have relaxed. Sure, we’ve had some fun too, but we have relaxed much more than I normally do on vacation.

I never take a “relaxing” vacation. I’m usually more interested in an adventure or exploring a new city, but this time, we have relaxed, and I will admit, I’ve enjoyed it. I don’t want to take a “relaxing” vacation all the time, but once a year might not be bad.

From the resort where we are staying, there are lots of different vantage points. On one side is the Atlantic Ocean…beautiful. On another side, there is a shipping channel…cargo ships and cruise ships come and go all day. On yet another side, we have a beautiful view of downtown Miami and the Port of Miami. We have taken advantage of all of them…entertaining ourselves with different views throughout our stay. Watching a gigantic cargo ship being loaded and unloaded is actually quite relaxing. We’ve done a lot of that.

Interestingly, I’ve become obsessed with the ships that have come and gone. For example, one was named AS Fabiana. I put the name in Google, and I discovered there are several websites through which you can get information on vessels and track their movements. One is called marinetraffic.com. You can see the information on any ship out there. To see the most recent information on AS Fabiana, click here. There is another site called vesselfinder.com that gives good information as well. A cargo ship named Northern Julie is in the Port of Miami as I type, and we checked it out at vesselfinder here. The ships became even more fascinating to us once we had more information about the size of the ships, where they had been, and where they are going.

By the same token, I’ve been entertained by an aviation app that tracks airline flights. Since we live in Charlotte, an airline hub, I’ve used the app before, but it became more fascinating here in Miami, as the flights seem to be going to more exotic locales. There are several apps that track flights, but the one I found easiest to use is called FlightAware. You can track by flight number, airline, airport, or even track flights as they fly overhead. I took great pleasure in seeing which flights were flying over us while we were out by the pool in the afternoons, and while my brother made fun of me for it, he eventually started asking, “Where is that one going?” Download the FlightAware app to your phone from the App Store. The icon looks like this:

When my brother and his wife left this evening, using the FlightAware app, I was able to see when their flight took off, and I even saw their plane from our resort. Because I could find it based on the positioning shown on the app, I took a picture of it as the plane soared over Miami:

We’ve enjoyed using an app called SkyGuide, as well. I’ve talked about it before. It is a great app for identifying constellations, satellites, stars, and planets. Just tonight, my husband and I were sitting out by the jetty, and he asked me, “What is that orange light in the sky over there?” I had no idea, but told him I had an app for that! Before I could get the app open, he said, “I bet it’s Mars.” He was right! And then, using the app, we were able to find Saturn and Jupiter too! There was too much light from the city of Miami for us to see any satellites, but we were thrilled to see three planets! The son of my friend, Mary Ann, told me about the app when we were at the Virginia Creeper Trail last year, and it is a favorite. While these apps have added another dimension to our relaxation, we’ve done lots of other fun things. I’m not going to pretend to be a Miami expert. I’m not. Our resort is not in Miami proper, so we have spent very little time in Miami. We did have a great Cuban dinner in Miami Beach last night, and we had a lot of fun people-watching a couple of nights there too. And it was some good people-watching. Whew! I love how our world is made up of so many different types of people. No two are alike. And that is exactly what makes Miami Beach (and the world) an interesting place. We weren’t “judging;” we were amazed, impressed, and entertained.

Our Cuban dinner last night was a highlight of the trip:   Lechon Asado; Ropa Vieja; Jamon Croquettas; Frijoles Negros; Tostones; Yuca Con Mojos…all delicious. I love all sorts of Caribbean food. My husband is not an adventurous eater, so I think he was a little apprehensive, but he was pleasantly surprised to find out just how good Cuban food is. And who doesn’t love a good Cuban mojito?! I opted for a passionfruit mojito…muy delicioso!

Aside from that, we’ve spent a lot of time in the sun, hanging out in the pool, having cocktails on the patio, walking around the island, golf-carting around the resort, and laughing…laughing a lot. My brother and my sister-in-law are two of the funniest people I know, so I have laughed a lot. My husband and I find laughter very relaxing…so we have relaxed a lot with those two! I’ve loved every minute, and I’m shocked that I’ve been able to just relax. I usually hit the ground running on vacation, but it has been refreshing.

Clearly, when I say we’ve had a relaxing vacation, there are lots of reasons. Yesterday, from the pool, we watched a Celebrity cruise ship leave port. We also watched a peacock try to impress another one with his gigantic tail fan. We floated in the pool. We people-watched. We’ve walked, and we’ve treaded water quite a bit, so we have exerted some energy, I guess. It has just been so beautiful outside that any exercise didn’t feel like exercise! Lazy days have been the rule during the vacation.

After we get home from this trip, our daughter will return soon thereafter from Iceland, and then we are off on another adventure with my sis-in-law, her son, my friend (Angela), and her daughter. There won’t be much laziness on that vacation, so I’m storing up my energy. My daughter will likely be exhausted after her Iceland trip, so she will have to rest up in the three days we are home before the next trip. That will be a more active vacation…one in which I will say many times, “Let’s get moving! We can sleep at home!”

Missing My Girl

It hasn’t even been a week since my 14-yr-old daughter left for Iceland, and I’m already missing her. I know…that’s pathetic. We received our first “email update” a couple of days ago, and it sounds like they are having a fabulous time, but it might have made me miss her more, if that is even possible. I know I’m not the only crazy parent missing a child right now, though. I’ve talked to several friends whose children are on these trips, and we all feel the same way. We miss our children! However, I feel pretty sure she isn’t thinking of us…I hope she’s not. I hope she is enjoying everything Iceland has to offer and then some!

She is traveling in a group of twelve teenagers, with two young adult leaders…a girl from North Carolina, and a guy from Louisiana. The group leaders write the updates, and they say something about each traveler. According to that first update, while they were visiting The Blue Lagoon, a well-known geothermal spa, my daughter “led the group to the smoothie bar and then to the mud mask station.” I actually laughed out loud when I read that, because my daughter loves smoothies, and she loves masks. At least I know she isn’t starving, and her skin should be glowing when she comes home!

Blue Lagoon Geothermal Spa, Iceland

I’ve worried about her “starving,” because my daughter is a picky eater. I tried to expose her to lots of different flavors when she was a toddler, but she’s like her daddy…she likes bland food. She eats a lot of grilled chicken, pizza, yogurt, broccoli, fruit, potatoes, grilled cheese sandwiches, and rice. Oh, and peanut butter. I told her before she left that she will have to eat whatever they give her. According to one of her leaders, on the last trip, they had a lot of lamb and salmon, two delicious foods I’ve never been able to get my daughter to eat. My fingers are crossed that she will expand her palate on this trip. I did stick a few snacks in her bag, but she likely has gone through them by now. She doesn’t get that picky-eating gene from me. I will eat just about anything, except organ meat…nope, not gonna do it. My husband, on the other hand, eats nothing spicy. There are things he has declared “spicy,” and then I take a bite and laugh at him.

My sister-in-law has a 15-yr-old son on another trip offered by the same tour company. He is touring Ecuador and the Galapagos Islands. We shared our updates with each other earlier today, and his trip sounds exciting too! According to his update, he “nearly had a nose to nose interaction with a baby sea lion who was looking for a buddy to swim alongside him!” Sounds like so much fun! He will get home two days before my daughter, so I will get to talk with him and hear all about his trip first. I can hardly wait, but I’ll have to wait another week.

I’m flying up to New York to meet my daughter and a couple of her friends when they arrive from Iceland. I’m thinking I need to make a gigantic WELCOME BACK sign for them. Think they’d be embarrassed? I don’t really care…I’m doing it. The only people they will know in the JFK Airport will be the people from their trip. I’m flying up a day early and staying at a hotel near the airport, and I will be so excited that I won’t sleep a wink that night. Pray for a safe return for them, and pray they are on time, so I don’t have to wait any longer than necessary.

My husband and I are meeting my brother and sister-in-law on vacation later this week. Our favorite dogsitter/housesitter arrives tomorrow night. I’m hoping the vacation will be a distraction from how much I’m missing my girl. We’ll laugh a lot, get some exercise, and lounge on the beach for a few days. I’m hoping my brother will cook dinner for us every night…he’s a great cook.

A friend’s daughter arrived home earlier this week from her tour of the Pacific Northwest. She was gone for three weeks. I called my friend, the mom, the morning the daughter was coming home and asked if she was excited that her baby girl would be coming home tonight. Of course she was! She sent me a cute picture they took of her two daughters right after the younger one arrived home safely. You can see it below. So sweet. You can tell they are so excited to see each other. I asked my friend if she cried, and she said, “We all did!”

I guess I need to wear waterproof mascara next week when I go to meet my daughter at the airport in New York.
