The Holidays Have Begun

The holidays have officially begun!

Thanksgiving marks the official beginning of the holiday season, and if our Thanksgiving is any indication of how our holidays will be…we are in for a delightful holiday season! This year, we had planned to have a quiet Thanksgiving at home…just the three of us, but then the family of one of our daughter’s friends invited us to join them!

My daughter and I returned from vacation Wednesday night. After a four hour flight home, I ran a few errands and unpacked one of my two bags before watching a recorded episode of The Young and The Restless (Chance Chancellor is alive!) and crawling into bed. It’s the flight that makes me tired. I just can’t sleep on the plane, so all that time just sitting makes me weary.

But I awoke bright-eyed and bushy-tailed on Thanksgiving morning, because I got plenty of sleep. We weren’t due at the friends’ house till five in the afternoon, so I had plenty of recovery time…time to catch up with some friends and family by phone (after the vacation) and time to put together the only thing we were contributing to the meal…a buttermilk pie for dessert. (I will post the recipe at the end, if you’re interested.)

I have written before about Thanksgiving and how it’s not my favorite holiday. I have always thought it was overrated. I have several friends who say Thanksgiving is their favorite holiday (Maureen, I’m looking at you), but I’ve never felt the same way. However, after yesterday, I had a change of heart. I realized we just weren’t doing it right! Yep…I no longer think Thanksgiving is overrated, because we had a great time with our new friends! We talked, we laughed, we dined…and I even enjoyed the turkey! Just like I’ve always thought Thanksgiving is overrated, I’ve felt the same about turkey, but I must have been eating the wrong turkey, because last night, our hostess prepared a delicious turkey…and our daughter’s very favorite macaroni and cheese.

In fact, the macaroni and cheese was one of the topics of conversation. Our daughter has never eaten macaroni and cheese…no matter how hard I tried to get her to eat it over the years, she would always put her foot down and refuse. But one night, she came home from this friend’s house and declared that she loved his mom’s macaroni and cheese! A breakthrough! After that, I offered to make macaroni and cheese for dinner, and she informed me that the only mac and cheese she likes is the friend’s mom’s mac and cheese. After having it last night, I understand…the mac and cheese was divine! In fact, everything was great…especially the company!

So I no longer think Thanksgiving is overrated. At the age of 54, I have discovered that Thanksgiving is fun! I think it’s a time to bring people together. I think it’s a time we should all count our blessings…no matter how big or how small. Yes, I still believe we should all be thankful all year. I think we should spend time with people we love and make new friends all year. I think we should enjoy life all year. But Thanksgiving is a reminder…it’s a gentle reminder that life is what we make it…so make it good.

Now, let’s get these holidays underway! Let’s drag the Christmas decorations down from the attic and sing Christmas carols while we decorate! And let’s make lots of new friends!

***Buttermilk Pie Recipe***

Ingredients:

  • 3 large eggs
  • 1 cup sugar
  • 2 tblspns plain flour
  • 1 stick melted butter, slightly cooled
  • 1 cup buttermilk
  • 2 tspsns real vanilla extract
  • 1 unbaked 9-inch pie shell

Topping ingredients:

  • 1/2 cup seedless blackberry preserves
  • 1 tblspn Chamborde liqueur
  • OR you can use any fruit reduction

Directions: Beat eggs slightly. Mix sugar and flour well and add to eggs. Mix until creamy. Add melted butter, mixing well. Add buttermilk and flavoring. Pour into pie shell and bake at 325 degrees for 45 minutes to an hour until custard is set.

Topping Directions: Put preserves in saucepan and warm on medium heat, stirring constantly with wire whip until smooth. Remove from heat and add Chamborde. Let cool to lukewarm and serve over warm pie.

Eighteen Years Ago

Eighteen years ago.

Eighteen years ago, I was in the hospital, awaiting the birth of our one and only daughter. Her original due date was October 11, and I loved the thought of 10/11 as a birthday, because right out of college, I was a flight attendant for a while, and one of my favorite planes was the L-1011. It sounded like the perfect birthday to me. And honestly, October 10 sounded good too…10/10. It’s also former NFL quarterback Brett Favre’s birthday. Don’t ask me how I know that, because I don’t know how I know…I just do. I have been a football fan all my life, and he is one of my favorite quarterbacks. (Joe Namath is my absolute favorite.) So sharing a birthday with Brett Favre was pretty cool. Obviously, neither of those worked out.

Three weeks before she was born, my husband and I went out to dinner at a local restaurant. We were discussing how we had no idea what day our baby would actually arrive when the waiter delivered our appetizer to the table. As he placed the plates in front of us, I noticed he had October 12 written on his hand. As he walked away, I said to my husband, “Do you think that was a sign? He had October 12 written on his hand.” We had a good laugh. Little did we know then…

She was born on a Sunday night at 10:31pm…after I had been admitted on Friday at 7:00pm to be induced. Don’t do the math. It’s frightening. There had been a doctor checking on me for two nights, but when the next doctor arrived on Sunday night, he was ready for our daughter to be born. He knew I was exhausted and offered to do a C-section, but I said, “We could have done that yesterday. If you think she’ll be born before midnight, let’s just get this done.” And we proceeded without the C-section.

Our baby girl was a beautiful baby with a head full of dark hair. She weighed 7 pounds, 7.7 ounces, which they officially rounded up to seven pounds, eight ounces. I should have known something about her personality when we got her home. She would not sleep. She would not be quiet.

Some things never change. She has never been a sleeper. She is always busy. She is always on the go. She simply doesn’t sit still. It wore me out when she was an infant and a toddler, but after that, I took full advantage of it. When she was two, we never stayed home anymore. During the summer, we went to a local amusement park almost every day. It was somewhere we were both happy, because we were outside and interacting with other people. I had (and still have) great friends with kids the same age, so we all got together almost every day. And we traveled. I would throw her in an umbrella stroller, strap a carseat on my back, throw my carry-on into the basket underneath the stroller, and get on planes to visit family or just go somewhere. I remember pushing her through the airport with a car seat strapped on my back and hearing people say, “You go, girl!” Or one said, “Wow! You are a real woman!” I got things done. I wanted to travel, and my husband didn’t always want to go with us, so I just made it happen.

And that has never stopped. I learned a long time ago that if she got fussy as I was dragging her all over the country, all I had to do was throw some food down her throat, and she could keep moving with me. Now, she’s two or three inches taller than I am and in way better shape than I’m in, so I have to keep up with her when we travel! I try to make sure we make as many travel memories as we possibly can before she goes off to college next year, because I know she won’t want to go with me so much anymore. And that’s OK. I want her to be independent.

The way I see it, we have 42 more weekends before we drop her off at college next fall. We have another Thanksgiving week, Christmas holidays, one more spring break, and a summer before she flies the coop. If I subtract some of those weekends for things she wants to do without us, we’re down to about 36 or 38. Sounds crazy that I’ve counted, but I want to make sure we take full advantage of this time. I’ve planned a little trip for Thanksgiving, and she and I are doing a spring break with her classmates. I haven’t figured out what we are doing over Christmas break yet, but I’m working on it.

She is eighteen today. As of today, I no longer have access to her medical records without her permission. (I need to get her to get a notarized HIPAA form done, so if she gets sick and lands in the hospital, I can get information.) That baby who could do nothing for herself now does most everything for herself. She is eighteen, so she can even leave the country without my permission…alone, if she wants. Of course, she would need money from us, so I doubt that will happen without our knowledge. She even said to me recently, “As soon as I turn 18, I’m taking Life 360 [an app] off my phone.” I replied, “That’s fine! You’ll need to buy a phone, though, because your daddy and I actually own that one, and we want Life 360 on it. Oh, and you’ll need to buy yourself a car, because without Life 360, you’re not driving the one we own.” We had a good laugh!

I can’t believe it. We have come a long way! I remember when she turned one, I thought, “Wow. I survived a whole year with a baby.” It wasn’t easy. Lots of folks thought I was a lunatic, because they all had sleeping babies. Some of them later actually had babies who ran and jumped and climbed and dodged like mine did, and then they had a new appreciation for what I was dealing with. Yes, she nearly killed me that first year, but I wouldn’t have it any other way. That first year seemed crazy long, but the next seventeen seem to have passed in a flash!

Eighteen! How did that happen so fast?!?!

The Chick-Fil-A One App…Winning!

Anybody who knows me knows I love to win. I don’t care about winning an argument. I don’t care about getting my way. But if there’s a competition of some kind, I like to win. A friend of mine has a dog in an online photo competition? I vote as many times as I can. Another friend has a child trying to get votes for soccer player of the year? I’m sharing it and voting every chance I get…even when I wake up in the middle of the night. And I do it, because I want to win…or at the very least, I want someone I know to win.

I have always loved Chick-Fil-A. The first one I ever visited one was in Eastdale Mall in Montgomery, Alabama, in 1977. The mall had just opened, and I was 10 years old. One of the employees was outside the store, in the mall corridor, holding a tray full of tiny bite size pieces of a Chick-Fil-A chicken, so I took one…and I never looked back. I ate there every time I went to the mall, and that was pretty often. But back then, they didn’t have waffle fries. They had shoestring fries, and really…I liked those better, but when they changed them, it was OK…i got used to them. I think they changed them at about the same time I visited my first free-standing Chick-Fil-A on Windy Hill Road, in Marietta, Georgia, in 1990, but I could be wrong on the timing. That was the first place I had their waffle fries, and I didn’t love them, but I have developed a taste for them. They had yummy cole slaw then too. It has since been removed from their menu, but I tried their new mac and cheese last week, and it was pretty darn good. I’ll always miss the cole slaw, though.

And a couple of years ago, we got the Chick-Fil-A One app. Oh, it’s a total game changer. Download it to your phone and have it scanned every time you purchase food there…or better yet, load money into the app from your debit card, and you can even purchase food using the app. That’s where my winning comes in.

My goal is to have more Chick-Fil-A points than anybody else. OK, so I know I’m not really going to ever have the most Chick-Fil-A points. I have one child. We can only eat so much, and even if her friends are with us, there’s only so much they can all eat. But I’m giving it the old college try. I am the mom who refuses to part with any of my Chick-Fil-A points. I’m just letting them add up. My favorite Chick-Fil-A location was closed for a few months last year, because of a remodel, and that really cut into my points accumulation, but I have red status, meaning that I have accumulated enough points to get 12 points per purchase on the app…two points more than just a regular member.

And I really love sports season or parties, because if someone needs a volunteer to bring in a nugget tray, I’m your gal! Yes, I know…I’m spending lots of money to get those points, but it’s not like no one eats it. Every single time I’ve ever delivered a nugget tray to a team or group, no nugget has been left unturned. With a sports team, every nugget is usually gone within five to ten minutes…so it’s money well spent. Teens love Chick-Fil-A.

So without telling you how many points I have right now, I can tell you this: my plan is to accumulate enough points that our daughter can get free sandwiches all the way through college when she goes in three years. I’m still trying to figure out exactly how many that will be, and I have nowhere near enough points, but I’m on my way!

An added bonus? I don’t have to get out my credit or debit card every time I go through the drive thru! Before I had the app, I would hand them my card to pay, and then when they handed me back my card, I would get in a rush and just put it in the wrong pocket of my handbag or wallet, and the next time I wanted to use it, I would panic, thinking I had lost it. With the app, I just hold up my phone to pay, and they scan it right from there…no more fumbling for my debit or credit card, and no more panic later when I can’t find it.

But here’s more motivation for you to get enough points to become a red member on the Chick-Fil-A One app: when you reach red status, you get even more special stuff! Once you reach red status, you and five guests can get a “backstage tour” of the Chick-Fil-A home office in Atlanta…just give 30 days notice. And as if that’s not enough gratitude, you also get two free tickets to the College Football Hall of Fame in Atlanta! If you are a football fan who has never visited, it’s a must-see. I took my daughter a few years ago, even before I had the Chick-Fil-A One app, and we both loved it!

So yes, I have a problem…I like to win. And even though I know it’s costing me money every time I get those points, I know I am accumulating points in the process…and I’m on my way to free sandwiches for our daughter when she will need them most. She won’t have to feel guilty one bit about going to Chick-Fil-A when she’s in college, because it will be FREE!

It’s National Mac & Cheese Day

Today, July 14, is National Mac & Cheese Day! I have loved Mac & Cheese since I was a little girl. Back then, I loved Kraft Mac & Cheese, and while it will do in a pinch even now if I add some real cheese, I have my very own beloved Mac & Cheese recipe that I prefer when I have time. I used to call it Protestant Mac & Cheese, because it’s perfect for a covered dish lunch at a church gathering in the South.

I love to cook but don’t do it every day. When I do, I love to make Mac & Cheese, so today, I’m sharing my very favorite personal recipe in honor of National Mac & Cheese Day! Enjoy!

Serves 6.

INGREDIENTS:

  • 3 TBSPNs butter or margarine, divided (I always use salted butter)
  • 1/4 cup flour
  • 1 TSP salt
  • 2 cups milk
  • 1/4 pound Velvet Pasteurized Cheese Product, cut up
  • 8 ounces Colby Cheese, grated
  • 8 ounces Sharp Cheddar, grated, divided
  • 2 cups elbow macaroni, cooked, drained
  • 1 sleeve Ritz crackers, crushed into crumbs

DIRECTIONS:

  1. Preheat oven to 350 degrees
  2. Melt 3 tblspns of the butter in large saucepan on low heat.
  3. Blend in flour and salt, cooking and stirring for one minute.
  4. Gradually add milk; cook stirring constantly, until thickened.
  5. Add prepared cheese product plus the Colby cheese and 4 ounces of Sharp Cheddar, stirring until melted.
  6. Stir in macaroni.
  7. Pour mixture into lightly greased 1-1/2 quart casserole. Sprinkle with Ritz Cracker crumbs and remaining Sharp Cheddar
  8. Bake at 350 for 20 minutes or until thoroughly heated.
