Stocking Stuffers 2020

Stocking stuffers 2020.

When I was a kid in Brewton, Alabama, we didn’t have a fireplace. There was no place to hang the stockings “by the chimney with care.” So we taped them to a door in the living room. Yep. Kids will be kids, and we wanted to hang our furry stockings that had our names spelled across the top in glitter, so we taped them to a door.

Most of the childhood Christmas Eves I remember were in the 1970s, and back then, I remember people mostly getting candy in their stockings. We would usually get lots of candy…no gifts…just candy. The gifts from Santa were spread all over the living room, unwrapped. Our gifts from our parents were wrapped and placed under the tree, but Santa didn’t wrap at our house.

When our daughter was little, Santa didn’t wrap at our house either. But after she had been in school a couple of years, she learned Santa wrapped gifts at other people’s houses and asked why he didn’t wrap her gifts. I told her to mail him a letter asking him to wrap her gifts. She sent the letter, and the gifts have always been wrapped since.

As for the stockings at our house, we get more than candy these days. We usually get lots of little gifts. I think I know some ideas Santa has for this year, and I’m sharing them with you here. You can read my posts about stocking stuffers from 2019 (two different posts) by clicking here and here. And here are some new ideas for 2020:

***First, I encourage you to shop local for stocking stuffers. In Charlotte, some great places to check for stocking stuffers are Paper Skyscraper on East Blvd, The Buttercup on Providence Road, and The Mole Hole on Colony Road. It’s important we support our local businesses this year.***

-Face Masks. I know. We are all weary of the COVID pandemic, but if we have to wear face masks, we can at least make them fun! The Buttercup in Charlotte offers a great selection of masks that are functional and fashionable. Visit the store at 343 Providence Road, or shop their website here. In Gainesville and Ocala, Florida, there’s a cute gift shop called Agapanthus that has a crazy cool selection you can purchase online too. See their selection here.

-Portable charger/power bank. If you have someone in your family who flies frequently (in normal non-COVID times) or spends a lot of time outdoors but needs their phone…a portable charger/power bank could be a fantastic stocking stuffer. I remember when they used to be expensive, but now you can get good chargers for less than $30! In fact, I recently flew to California, and I purchased a new portable charger from Amazon. Called the PowerADD Pilot 4GS 12000mAh, I got it for just $22.99 with free delivery because of my Amazon Prime membership. It comes in five colors, and it charged my phone several times before it needed to be recharged. They also make a 20000mAh model, and it’s just $27.59. See them on Amazon here.

-More Fun Socks. Yes, I know I listed fun socks last year, but the ones I’m endorsing this year are different than those…but those are still great too. I mentioned Agapanthus in Gainesville and Ocala earlier…well, they have some socks that will make super stocking stuffers! Theirs start at $10.99, and they have a cute selection of holiday-themed socks, Florida socks, and other socks for men and women. Order here.

-Cinnabon Signature Frosting Pint. Who knew?!? A friend told me Cinnabon offers this pint of their signature frosting at the holidays for only $7! You know you’ve walked through your local mall and inhaled the deliciousness that is Cinnabon. I have always said I think they have a diffuser full of the aroma sending it out to draw people into Cinnabon. And frankly, whatever it is…it works. Cinnabon is delicious. If you have a Cinnabon lover in your home, this could be a great stocking stuffer! You can get them from by going to your local Cinnabon or through DoorDash or Grubhub.

-Magnetic Eyelashes. Yep. False eyelashes are back, and while some have the patience to sit in a salon to get them, others of us need an easier way to get them. Enter magnetic lashes. I’ve used them. I don’t know if the brand matters, but you can read reviews on Ulta.com or Amazon.com to decide which one sounds best to you!

Lucky Fortune Blind Collectible Bracelets. These cute bracelets come hidden in fortune cookies. Inside each cookie is a surprise bracelet and a fortune. With over 100 bracelets in the offering, there are lots of surprises! These would be great for ages 5 to 15. To add a little fun to it, the packaging is a take-out box! Order a four pack for $10.29 at Amazon with your Prime account and get free shipping. Purchase here.

-Hungry Girl Your Daily Bright Boost. Hungry Girl Lisa Lillien devised the formula for this drink mix with the help of the folks at eBoost. With its citrus flavor, vitamins/minerals, and 110mg of natural caffeine, it’s a great way to start the day…or even as an afternoon pick-me-up. Counting calories? No worries! This is from Hungry Girl, the queen of low-cal ideas. This is a great stocking stuffer for teens and adults. It comes in boxes of 15 packets for $24.99, or subscribe and get it for $19.99. You’re likely spending way more than that on coffee, but this actually has nutritional value. Get it here.

-Duncan Imperial YoYo. I remember when Duncan YoYos were advertised on TV during Saturday morning cartoons…back when Saturday morning cartoons were a thing. Remember those all those commercials aimed at kids? I think they had some sort of YoYo champions on the ads, because those kids could do tricks I could never do. I don’t even know if kids today know what a YoYo is, so it’s time for them to learn. Mine teenage daughter will get one of these. Purchase at Amazon here.

Photo from Amazon.com

-Playing Cards. I know. Sounds basic, right? But individuals and families can get hours of fun from a deck of playing cards. Wanna step it up a notch? Get some playing cards featuring the logo of the defunct TransWorld Airways, TWA. The old TWA terminal at JFK Airport in New York has been refurbished and opened as a TWA-themed hotel, and you can order playing cards for $10 from the hotel website. Purchase here.

-Cheeky Lip Balm. A friend introduced me to these recently. Eclair Lips offers lots of lip balms, but their “Cheeky” line is my favorite. With cheeky names like “Kiss 2020 Goodbye” and “Better Than a Lump of Coal,” these are fun additions to Christmas stockings, and they provide great lip protection for the winter months! Get them at Eclair Lips here.

-Goli ACV Gummies. My husband and I both love these. Do they actually provide any nutritional benefit? I don’t know, but we like them as treats twice a day. I feel like they probably aid my digestion, but I haven’t done any scientific studies…because I’m not a scientist. I had always heard apple cider vinegar had health benefits, but I could never choke it down unless I mixed it with apple juice…lots of sugar and calories in apple juice. These dummies make it easy to get my ACV. Order from Goli here or from Amazon here.

-Jiffy Pop. If you’ve never made Jiffy Pop popcorn, it’s high time you did. When I was a kid, Jiffy Pop was all the rage, and honestly, it’s a lot more fun than microwave popcorn. It’s fun item to drop into everyone’s Christmas stockings…and pop it up on Christmas morning! It had a slogan at one time say it’s “as much fun to make as it is to eat!” We love popcorn at our house, so I know this will be a hit. Purchase at Amazon here.

-Hand sanitizer. I know you’re tired of hearing about hand sanitizer, but hear me out. Everyone knows I love PooPourri toilet sprays, but does everyone know I also love PooPourri hand sanitizers? Did you even know they make them??? Well, they do, and they come in pretty little bottles and have a lovely scent. They are my favorite hand sanitizers, and I just found out they also have sanitizing wipes! I highly recommend PooPourri sanitizers, and they make cute stocking stuffers. Get them here.

Silicone Tea Infuser. Have a hot tea drinker in your family? People who love their tea love their tea. You can help them enjoy their tea with a cute manatee-shaped infuser, the Fred & Friends Manatea Silicone Tea Infuser. Heck I might take up tea drinking, just so I can use one of these! It might seem strange at first, but they can hang this cute little infuser over the edge of their cup or mug, and it won’t let leaves leak out. And who doesn’t love a manatee? But that’s not all they offer! The same company offers a flamingo infuser, an elephant infuser, and a sloth infuser. Order from Amazon here.

-School Spirit Morse Code Necklaces. These are so cute! The Buttercup in Charlotte has a selection of necklaces, offered in college colors, with the name of the school or the school’s battle cry (“Roll Tide” anyone?) in morse code. These would be great stocking stuffers for high school seniors, college students, or anyone who loves their college. Priced at $50, these will be well-received. To purchase, visit the store at 343 Providence Road or purchase online here.

-Patchology Eye Gels. Priced at $18 for three pairs of gels, these are a fun, glittery stocking stuffer. They claim to decrease dark circles, combat hyper pigmentation, and brighten skin tone. I hope they do, but they also just feel good on the eyes! Since they are “gently cooling,” I believe they likely reduce puffiness around the eyes. Who wouldn’t love that? Get them at Neiman Marcus here.

-Dazey Coconut and CBD Bath Soak. What sounds better than a hot bath when you need to relax? Add in some coconut and CBD bath soak, and it sounds perfect! Sign me up! Drop this in someone’s Christmas stocking, and you’re giving the gift of relaxation! Get this at Nordstrom for $12 here.

Photo from Nordstrom.com

-Wearable Nail Polish Holder. Lots of people are spending less time at the nail salon during this pandemic, so they’re doing their nails at home. This little wearable nail polish holder from Tweexy, which is worn like a ring, keeps the nail polish bottle in close reach. Genius! Get it at Amazon for $9.99 here.

-Monocular. Sounds weird, I know, but it’s a great gift for outdoorsmen, birdwatchers, and sports fans. Easier to handle than binoculars, a monocular will fit perfectly into a Christmas stocking! I checked on the top-rated ones, and the one I found had the best rating was the Hawke Endurance 8X42 Monocular. It’s a little pricey at just over $100, but it’s waterproof and gets great reviews. And because of that, it’s sold out at a lot of places, but I found it at OpticsPlanet.com for $105. There are less expensive monoculars on Amazon, such as the Starscope…so look around before you buy. My husband is getting one of these. Order from Optics Planet here.

Photo from Optics Planet

-Tabletop Football. Remember the old days when we made paper footballs and played tabletop football using our hands as goalposts? Well, this set from Rhode Island Novelty provides pre-made footballs and plastic goalposts, so there is no question about whether the goal posts were moved. Get it at Amazon for $5.99 here.

So there you have it…my picks for stocking stuffers in 2020. I’ll have one of each, please!

Your Daily Bright Boost

Your Daily Bright Boost

I’ve said it before, and I’ll say it again…I love Hungry Girl. Need some easy cookbooks that offer swaps for higher calorie recipes? Turn to Hungry Girl. Need some fun low-cal cocktails? Hungry Girl! Want to try a beverage mix that was developed to offer nutrition and a morning (or anytime) pick-me-up with only 20 calories? Hungry Girl has that too! It’s called Hungry Girl Your Daily Bright Boost, and I love it!

I’m not one to try nutritional supplement fads. As soon as someone says “whey protein shake” to me, I run the other way. I don’t hang out at the local nutrition stores, looking for a miracle cure to growing old. But when Hungry Girl developed Your Daily Bright Boost with Eboost, I was game, because I know Lisa Lillien, the founder of the company, helped develop the product, and she isn’t going to put the Hungry Girl name on something she doesn’t believe in. In fact, I could hardly wait to try it! Hungry Girl has never steered me wrong, so I felt confident I would like it.

I ordered a box of 15 mix packets, and when it arrived, my teenage daughter and I each mixed a packet with water and added lots of ice. We sat down at our kitchen table and tried it together, and we both declared it delicious. A nutritional beverage that can please a teenage girl and her 53-year-old mother? Sold!

Hungry Girl Your Daily Bright Boost contains 15 vitamins and minerals, collagen peptides to improve skin appearance and nail growth, caffeine to put a little pep in your step…all for just 20 calories and mixed into a delicious citrus-flavored driving mix! And guess what else? It’s gluten-free, soy free, non-GMO, and sugar free!

There are lots of different ways to mix it. Sometimes, I stir the mix into 8-10 ounces of cold water and add lots of ice afterward…sometimes it’s cube ice, and sometimes it’s crushed ice. The crushed ice version feels a bit like a slushy to me, and I love it! Who wouldn’t enjoy and orangey-citrus slushee?

I have also been known to mix it with water/crushed ice and top it with whipped cream, which can sit on top or be stirred into the beverage to create a creamsicle flavor…refreshing in the morning or by the pool in the afternoon!

But here’s the great thing about it: it tastes great while delivering nutrition! Sometimes I drink it from a giant Tervis tumbler with a giant straw, and sometimes, I pour it into my Camelbak straw cup and take it with me. Sometimes I drink it in the morning, and sometimes, I sip it through the afternoon. When people ask me what I’m drinking, they actually get a little jealous when I describe the deliciousness…and nutritional qualities it offers…at just 20 calories.

Now that we’re heading into fall, I’ll continue enjoying my Hungry Girl Your Daily Bright Boost. The citrus flavor will make me feel like the best parts of summer are still here! If you’d like to order, click here. And if you’re not familiar with Lisa Lillien and her Hungry Girl brand, you should check out her website here. You can get great recipes and tips! You can also watch her live on Instagram at hungrygirl or on Facebook at Hungry Girl. She is adorable and funny…and I enjoy watching some of her recipe videos.

Try it! I’d love to hear what you think!

My Favorite Dogs of Instagram

My favorite dogs of instagram…

Bear with me here. I know you might be thinking dog Instagrams are silly. And I’m the first one to say, “yes, they are silly.” I haven’t always liked them, but right now, I’m all about some dogs of Instagram. Here’s why: COVID. I have always loved scrolling through Insta and seeing travel pics of my friends in different parts of the country…and different parts of the world. But with COVID, I’m seeing the same things over and over…beach, lake, mountains, beach, lake, mountains…it’s all the same things I’m posting, and frankly, it’s getting tired. The beach is OK, but I need more mental stimulation. The beach is a little like fireworks to me…after a little while…meh. I prefer seeing pictures of friends and their families in cities! I like seeing funny/fun gatherings and sporting events! I like seeing concerts! But none of that is likely to happen for a while, so Insta needs a boost. I don’t even like my own Insta right now!

And that brings us to the dogs of Instagram. It’s different! These dogs are funny and heartwarming! They make me smile. They spread joy…and can’t we all use a little joy right now?!?!

So here they are…my favorite dogs of Instagram:

mocha.dale  This one is my very favorite pooch of Insta. Mocha is an Airedale Terrier who lives in Miami. Honestly, I don’t even remember how I came across Mocha’s Insta, but I’m so glad I did! She is a beautiful 7-yr-old Airedale Terrier. She has been dealing with some health issues as of late, but she is an energetic Airedale through and through. We had an Airedale named Annie. She was truly my favorite dog of all time, and we lost her in November of 2013. But this beautiful Mocha reminds me of our Annie. She “talks” to her human, and she is just an all-around happy, beautiful dog. She swims. She does tricks for treats. And her “human” manages the posts really well. Plus, you get to see scenes of sunny Miami! Did I mention she wears hats sometimes? She’s my fave…hats off to Mocha! *Another Airedale I love on Insta is juan_theairedale.

dougthepug Doug the Pug doesn’t need me to boost his Instagram presence. This adorable little man has over four million followers! Yes! Four Million! But he works hard for his “money.” Doug the Pug has posted over 3,000 times, and he always has a gimmick. Just last week, he was wrestling with the waterhose in his yard…very amusing. He wears clothes! He eats ice cream and hamburgers! He goes boating! And he is very expressive! Everyone falls in love with Doug the Pug…including me.

butter_roux Y’all remember the 1989 movie starring Tom Hanks called Turner and Hooch? You might not even remember Tom Hanks was the star, but it’s likely you remember what Hooch, the dog, looked like. Well, Butter Roux and Creme Brûlée, the mastiffs featured in this Instagram account will remind you of Hooch, slobber and all. They live in Pittsburgh, and their “parents” take them on lots of adventures and post lots of photos. These two pups love each other, and because we don’t see a lot of this breed, it’s fun to look at their soulful eyes and frowning faces…gives new meaning to the term “resting bitch face.” But they’re sweet dogs! Need a smile? Check out Butter Roux and Creme Brûlée!

desi_loves_elmo Elmo, the Greyhound featured in this Instagram account is a funny-looking dog with great expressions. Aren’t Greyhounds just interesting dogs anyway? They’re so lean and expressive! Well, Elmo doesn’t disappoint, and his “parents” love to dress him up for the camera. Elmo posts regularly, and I think lots of his photos should be memes. Through this account, I also found some Italian Greyhounds named Mateo and Ernesto. You can see their Insta account at mateo.y.ernesto.

tunameltsmyheart This little chiweenie (chihuahua/dachshund mix) will quickly find a spot in your heart. I had never seen a dog like Tuna before; he is one of a kind. With a massive overbite and “jacked up” teeth, Tuna has an unusual look, to say the least. Some folks would likely say, “He’s so ugly, he’s cute.” Does that make sense? And did I mention he has an attitude that’s bigger than that overbite? But he’s loving to his people and will even do a video via Cameo if the price is right! Yep, you guessed it…Tuna is immensely popular on Instagram with over two million followers. I didn’t discover Tuna. He was already crazy popular before I found him. Serious….ugly cute. And I love this dog!

Here are a couple more I love but they don’t post very often, so I didn’t include them in my list above:

reallylolly OK, y’all. Lolly is the “daughter” of Hungry Girl Lisa Lillien. If you aren’t familiar with the Hungry Girl brand, you’re missing out. You can see the website for Hungry Girl here. But back to the girl of the hour…Lolly. I wish I could tell you what kind of dog she is. I’m sure I’ve heard Lisa say it before, but

frankiemoney Holy moly! Frankie Money took me by surprise! I was visiting Los Angeles with my daughter on New Year’s Day of this year, and while she and a friend were shopping at The Grove (not my favorite place in LA), I decided to sit down on a bench for a few minutes. I had been sitting there alone for about three minutes when suddenly, a woman sat down next to me. She appeared to have some sort of baby carrier attached to her torso, but instead of a baby, there was a small dog. The woman was turned in such a way that it was a little difficult for me to see the dog; his rear was toward me.  People were approaching, asking to take photos of the dog, so I knew there was something interesting about the pooch. And then, the “mom” stood up with the dog to take a photo with a passerby, and I saw what was going on. The dog was dressed in a white biker jacket, sunglasses, and gold chains holding not one, but two rhinestone-studded dollar signs. He was cute! And he was calm and friendly at the same time. And his name? Frankie Money. The mom introduced me to him. I took a photo of them, and I started following the adventures of Frankie Money on Insta…the rest is history. Frankie doesn’t post often…hasn’t posted since February…but when he does, it’s funny. I hope he’s OK?

#squishypaws If you have kids who ever watched Nicky, Ricky, Dicky, and Dawn on Nickelodeon, it’s likely you have heard of Squishy Paws, the family dog on the show. Squishy Paws is actually portrayed by a dog named Carson the Dog, but I’ve never found an Insta account for Carson the Dog. I included Squishy Paws in my list, though, because I recognized him when I did a tour of Paramount Studios with my daughter and her friend a few years ago. The kids didn’t believe me when I said it was Squishy Paws, so I asked the lady who was with him! That’s Squishy Paws in the photo of my daughter and her friend at the top of this piece!

Host a Virtual Brunch

I want to host a virtual brunch.

For the past few years, I have hosted at least one spring brunch for friends at my house, but this year will be different. No spring brunch, unless I get creative. My friends will need to be creative too, but maybe I can find a few who are willing to do a virtual spring brunch while we’re all “social distancing.” I talked to a lady at the bank (on the phone, of course) who told me she’d enjoyed a virtual cocktail hour with friends the night before, so why not a brunch?

Here’s what I’m thinking:

I’ll pick a future date (but not too distant) that might be good for a few friends. We can use the Zoom app to all “get together.” But how do we do brunch together through the app?

First, we all need to set a dress code. Personally, I think it should be spring luncheon dress…pretty dresses or blouses that will cheer us all up. I have a Saloni dress I got for Easter last year that would work perfectly. The fabric is bright pink, blue, orange, yellow, and green flowers on a white background. It has ruffles and looks very happy and seasonal. So I will encourage everyone to wear a happy, spring dress or blouse.

For decor, I think it will be fun to let everyone decide their own decor for their space, but make it as happy and springlike as possible! I will likely use my mother’s Desert Rose china and decorate my “space” around that…pink and green…with whatever I can find around my house. Or I have some other pretty spring china of Mother’s that’s blue and green…that could be pretty too. I’ll definitely use my sterling silverware instead of stainless…just to make it feel more special. And crystal glasses.  If I can find some pretty flowers outside in the neighborhood, I’ll use those too.

And how about the menu? Should we all have the same things? That could be tough, since we don’t all have access to the same things. But it will be interesting to see what everyone has! I know I have plenty of pimiento cheese, so I can make some finger sandwiches for my meal. I have some strawberries, so I can have those. Maybe I’ll make a Slow Cooker Breakfast Casserole from the Hungry Girl website. (Click here for recipe.) I’m having to think in terms of what I actually have on hand. For my beverage of choice, I’ll go with Prosecco…I have a lot on hand. If I have any fruit juice on hand, I’ll make a froufrou drink, but if not, I’m cool with Prosecco. And for dessert, I’ll have cupcakes from Baked By Melissa (click here), because I know I have an order arriving soon. They’ll add some color!

This pandemic is certainly not fun, because these are trying times, but it’s OK to look for a little happiness where we can. We’ll say some prayers for those who are sick and their families, and we’ll pray for those who have lost jobs or businesses. A little bit of “virtual” happiness might make us feel better for a little while. I think I’ll send out some virtual invitations today!

Stay safe. Stay well. And stay hopeful.

Portion-Controlled Desserts? Yes, Please!

Portion-controlled desserts? Yes, please!

If you’re anything like me, you have difficulty knowing what a real “serving” of cake is. Big slice? Little slice? What is the perfect slice? And then…how do I keep myself from eating more than I should?

Hungry Girl to the rescue!

Everybody knows I love Hungry Girl. Not familiar with Hungry Girl? I’m happy to introduce you! When you get to the website, sign up for daily emails, click that you heard about them from a Hungry Girl Ambassador (me!), and enter my name (Kelly Mattei). I’ve loved Hungry Girl for years, and I’ve promoted Hungry Girl for years, but now they know I’m promoting them! I don’t promote anything I don’t believe in, so you can bet your sweet bippy I believe in Hungry Girl.

On to the good stuff…

One of my favorite finds on the Hungry Girl website? Portion-controlled desserts…specifically, single serving desserts in mugs and cups. Sounds awesome, right?!? That’s because they are awesome!

I’ve made a couple of them, and my teenage daughter loves them as much as I do! They are all super simple and fast!

Here are some of my favorites!

Pineapple Upside-Down Cake Mug. My mother used to make Pineapple Upside-Down Cakes all the time when I was growing up. There was always at least one at every family gathering, and they disappeared fast! This Hungry Girl version is simple and easy, and the recipe makes two portions, each containing 201 calories. Not bad for a yummy and beautiful dessert! It’s a favorite at our house. I’ve made it when friends have come over for coffee, and it’s always a hit! Did I mention it’s beautiful too?! Get the recipe here.

Pineapple Upside-Down Cake Mug

Red Hot Apple Pie in a Cup. Another “easy as pie” recipe from Hungry Girl, this one is fun for kids too! (Do not let children make this unaccompanied. The pie is HOT when it comes out of the microwave!) It has candy and graham crackers in it! ‘Nuff said! And fruit! It has fruit! At only 140 calories per serving, it makes for a great dessert the whole family will love! I think it even sounds good for a snow day. My daughter loves to have friends over for snow days, and I love to feed them! Get the recipe here.

Red Hot Apple Pie in a Cup

Chocolate Cake Mugs for Two. Who doesn’t love chocolate cake?! This one comes in at 199 calories per serving, and the serving size is not in question, because it’s cooked in the perfect portion! This is another one that sounds good for a snow day or for friends who come over for coffee. The ingredient list is short, and most of the ingredients are likely on hand all the time. Make yourself happy with a little chocolate cake! Hungry Girl tells you how this age-old treat without overdoing it! Get the recipe here.

Chocolate Cake Mugs for Two

This is just a sampling of what Hungry Girl offers in portion-controlled dessert recipes. Seriously, try them. Anyone can make them…even those “kitchen challenged” friends of mine. You can see more portion-controlled desserts from Hungry Girl here.

We are hoping for a little snow in Charlotte over the next couple of days, so I’m going to the store and stocking up on ingredients for these gems tonight! All kids who love to sled are welcome to join in the fun…and eat some yummy desserts too! Moms…come on over for coffee, and I will share desserts with you too!

*Please let me know when you try these recipes! I love to get feedback!*

How Did I Miss Out on This?!?!

How did I miss out on this?!?!

Throughout life, there are times that I’ve thought, “How did I miss out on this?!?!” But by the time I reached age 52, I thought I had likely seen it all. Surely, unless it’s something new, there’s nothing that’s been going on for years around me that I didn’t even notice. Sure, at 40-something, I learned about the little tabs on the end of the aluminum foil box that hold the roll in place, but that was before I was 50. I wasn’t surprised about the flat tire icon on the car dashboard or the little arrow that shows which side the gas tank is on. If you don’t know all those things, you need to get busy Googling.

But earlier this week, I learned about something that is supposedly southern that I didn’t know about. That thing? Pineapple Casserole. Never heard of it till Sunday or Monday of this week, and as I type, it’s Wednesday. I grew up in Alabama. If it’s a southern dish, how did I manage to make it to 52 without ever having heard of it?!?

So I did what I do. I went to my personal Facebook page and asked my friends if they grew up eating/knowing about Pineapple Casserole, and if they did, where did they grow up?

I got lots of responses saying they grew up with it. Lots of folks from North Carolina, South Carolina, Georgia, Mississippi, and surprisingly (to me), Alabama…even a friend from High Springs, Florida, which is actually in the part of Florida that’s still “southern” had grown up with it! My people (an aunt and cousins) in the Florida Panhandle (a part of Florida that is still very southern) had not grow up seeing it, just like I’d never seen it. One cousin said she had it as an adult when a friend made it, but otherwise, my family had somehow missed out on Pineapple Casserole. Maybe it’s a familial thing??? I’d never even had it at my grandmother’s house in Birmingham, but according to a cousin who now lives in California, she had served it to her and her friends she referred to as the “soup ladies.” Even my friend, Amy, from Selma, Alabama (does it get any more southern than Selma?!?), said she did not eat it growing up. I promptly decided we must be related, since we both grew up in Alabama and had never heard of it. I now refer to her as Cousin Amy.

But just so you know, friends from Indiana, Philadelphia, and Delaware also had it when they were growing up, so now I’m wondering just how “southern” it is. But that’s beside the point. Everyone except one South Carolina girl gave it two thumbs up, so you know I have to try it.

I will make it later this week, and I can hardly wait! But for the holy grail of Pineapple Casseroles, I’m going to ask my friend, Crazy Jane, to make it for me when she visits. Crazy Jane is the best cook in the world, so even if we followed the exact same recipe, her version would be far better than mine. She just has a special touch.

I’ve asked several friends what I should expect. Some say it’s the perfect side dish with ham. Others say it’s almost dessert-like, because it does contain sugar…and not just a little of it. Plus, pineapple is sweet and a little dessert-like, right? It also contains butter, flour, cheese, and other stuff. Sounds disgusting, right? But my friends know good food, so I’m trusting them when they say it’s delicious. I thought the recipe for the Mississippi Pot Roast (click here) sounded disgusting too, but I absolutely love the stuff!

So I know you’ve been waiting for the recipe. I went to the Southern Living website for the recipe, because it’s a site I trust. If Southern Living posts a bad recipe, they hear about it from lots of southern ladies, so I think they’re pretty careful. You can see the recipe here.

If you’ve never had Pineapple Casserole and decide to make it, I’d love to hear your feedback! I’m starting to question my southern roots, since I’ve never had it! How did that happen?!? I’ve been to lots of church covered dish lunches and family potlucks, and I’ve never seen it. Or maybe when I was a kid, I saw it and thought it looked disgusting. That’s likely. I’ll let you know what I think after I make it.

I’m also wondering if I can get Hungry Girl to do some ingredient swaps and bring down the calorie count on this crazy sounding dish?!? Maybe I’ll send the recipe to their test kitchen!

Ice Cream for Breakfast!

Ice cream for breakfast!

When my daughter was five, she went to transitional kindergarten one day and told her teacher she had ice cream for breakfast. I was friends with her teacher, so when I saw her later in the day, she said, “Your daughter said the funniest thing this morning! She said she had ice cream for breakfast!” Busted! I looked at my friend and said, “Well, she did!” She laughed out loud, and then I explained, “Ice cream has nutritional value, right? Calcium? Vitamin D? Protein?Vitamin A?” Honestly, my child had asked for ice cream that morning, and I saw absolutely nothing wrong with it. It has more nutritional value than a muffin or bagel, right?

At our house, breakfast has always been a free-for-all. On weekends, I love to cook breakfast, but the family doesn’t always want it. When my daughter was too young to drive, she and her friends would gather around the table for breakfast on weekends, but now that she can drive, they usually meet somewhere…a bagel shop, iHop, Waffle House. But when she was a little girl? Ice cream for breakfast was never turned down!

Who knew there was an actual day on the calendar dedicated to having ice cream for breakfast? As people say now…how old were you when you found that out? I was today old! Even though my daughter is a teen who no longer wants to do crafts with me, I sometimes peruse craft sites, and today, I was looking up Valentine’s Day crafts when something about Ice Cream For Breakfast Day caught my eye.

As it turns out, the first Saturday in February is officially Ice Cream for Breakfast Day. That means this Saturday, February 1, is the big day this year! I could splurge and eat a big bowl of ice cream in celebration of the momentous occasion, or I can find some recipes that will still give me the ice cream without all the calories! So I did what I do…I turned to Hungry Girl and found some ice cream-based recipes that look delicious. And I’m sharing them with you!

Chilla in Vanilla Milkshake. Some folks have protein shakes for breakfast, but I’m not one of them. But this Saturday, I could opt for this delicious shake! I love a vanilla shake more than just about any treat, and at just 155 calories per serving, this one looks absolutely perfect to me! You can see the recipe here. The maraschino cherry is optional, but it’s a definite YES for me!retina_hg-chilla-in-vanilla-milkshake

Brownie-Bottomed Ice Cream Cake. When I was growing up, I loved a good ice cream cake. They were special treats at my house, because you couldn’t find them just anywhere. All my northern friends tell me they always had Carvel cakes, but we didn’t have those in Alabama. It wasn’t till I was ten years old that I actually had a Baskin Robbins Ice Cream cake, and it was love at first bite. I could likely eat the whole thing. Now, though, I simply can’t do that, so this Brownie-Bottomed Ice Cream Cake from Hungry Girl is the bomb! See the recipe here. Coming in at under 200 calories per serving, it is delicious…so delicious I might even have two servings! And it’s easy to make!retina_hungry-girl-healthy-brownie-bottomed-ice-cream-cake-recipe-20190703-1630-31216-1862

Banana Split Pie. OK, this one looks delicious, and it has nutritional value (bananas?!?!)! And who doesn’t love (ice cream) pie for breakfast?!?! With a meager 123 calories per serving, why wouldn’t you make this for breakfast this Saturday? But you’ll need to remember to make it Friday night, because it does need to freeze for four hours. My husband would pledge his undying love to me if I served this to him for breakfast…oh wait, he has already done that. But you get the point. See the recipe at Hungry Girl here.retina_hungry-girl-healthy-banana-split-pie-recipe-20190329-1849-16905-0283

Big Beautiful Baked Alaska. It’s big. It’s beautiful. And it has just 182 calories per serving. Did I mention it’s beautiful? Heck, Hungry Girl even tells you how to make homemade meringue in this recipe! You go, Hungry Girl! And nothing will say “good morning” quite like a Big Beautiful Baked Alaska! If I had all the ingredients, I would make it tonight! But alas, it’s not Ice Cream for Dinner day, so I’ll have to wait till Saturday’s Ice Cream for Breakfast Day celebration. See the recipe here.retina_hg-big-beautiful-baked-alaska
Hungry Girl’s Magically Peach-tastic Peach Swappuccino.
Not gonna lie, folks. I think my teenage daughter would go absolutely nuts over this…and I might too! Hungry Girl came up with this recipe as an answer to the Starbucks Crystal Ball Frappuccino that was  all the rage, and this one has half the sugar! You can see it in the lovely Hungry Girl glass below…it’s gorgeous! I mean, the drink is gorgeous…and the glass is too! Maybe I’ll get my hands on one of those glasses one day! This particular recipe actually contains no ice cream, but your teen would think you were “the bomb” if you served this up on Ice Cream for Breakfast Day! See the recipe here.retina_hungry-girl-magically-delicious-peach-swappuccino-20180322-1418-9203-9059

You still have time to pick up the ingredients for any or all of the above treats for Ice Cream for Breakfast Day this Saturday! Don’t tell your kids…wake them up with one of these fabulous surprises!

Healthier Options for Your Super Bowl Party

Hosting a Super Bowl Party?

It’s that time of year! College football (my favorite) is over, and there are just a couple more weeks of NFL games…division championships and the Super Bowl on February 2, Groundhog Day. This year, it’s Super Bowl LIV…that’s 54 for those of you who can’t read Roman numerals. Plus, it looks kind of cool that it’s LIV…makes me think of LIVE! I’m probably the only one thinking that, so I’ll move on.

Once the Super Bowl is over, we have to wait months for football to start up again, so let’s have a party!

I remember lots of past Super Bowls. The earliest one I remember is Super Bowl XII, between the Dallas Cowboys with Roger Staubach playing quarterback and Tom Landry coaching, and the Denver Broncos and their “Orange Crush” defense. I had likely watched other Super Bowls, because my parents were big sports fans, but that’s the first one I remember…maybe because it was the first one played in prime time? And boy, was it hyped! It was also the first one played in a domed stadium, the Louisiana Superdome, and the Cowboys won 27-12. I remember others too, and I wish I remembered Super Bowl X, in which Kenny Stabler, at quarterback, led the Oakland Raiders to victory over the Minnesota Vikings, but I don’t remember it. I remember Super Bowl XXXVIII for the wrong reason: Janet Jackson’s wardrobe malfunction. I remember it, because we were at a friend’s house who had previously played for the Carolina Panthers, and the Panthers were playing the Patriots. I had a 3-month-old baby, and I was tired, but I wanted to go, so I took the baby with me. I took the baby home right after the wardrobe malfunction, but that night lives on in my brain.

So this year, we don’t know yet who will be playing, but we can at least start planning our menus for parties! Since it’s just two weeks ago, I need to wrap my brain around a few recipes for the big day. I don’t go all crazy with a gigantic spread, but I want to have a few tasty snacks. Using Hungry Girl as my guide, here are a few I plan to use:

Buffalo Chicken Chili. Sure, I could make regular old chili, and I’m sure most folks would think it’s great, but why not change it up a bit? You can make Buffalo Chicken Chili in your slow cooker, and will be gobbled up by all your guests. It takes two things sports fans love, chili and Buffalo chicken, and mixes them together for a unique flavored chili that’s super easy to make. You can see the recipe here.BuffChili1_web

Cheeseburger Meatloaf. Not gonna lie…anything with “cheeseburger” in the title sounds good to me, and this is no exception. Cheeseburger Meatloaf? Yes, please! And have no fear…just because these are better for you than a normal fatty cheeseburger, they’re still delicious! I’ve made these several times, and the flavor is incredible. Plus, they are made in muffin pans, so the portion sizes are perfect. In fact, you can eat two of these and still stay under 200 calories! Mmm mmm good! Every man at the party will thank you for these hearty, flavorful treats. See the recipe for Cheeseburger Meatloaf here. Hungry Girl has other great cheeseburger-y recipes too. Maybe you’d like to make the Layered Cheeseburger Dip (recipe here)? Or serve the Air Fryer Cheeseburger Egg Rolls (recipe here)?retina_hungry-girl-cheeseburger-mini-meatloaves-20170220-1619-32204-3223-2

Veggie Chips. Nope, not the packaged ones you buy in the store. Hungry Girl has some great recipes for veggie chips made in your air fryer! I love the Air Fried Ranch Zucchini Chips (recipe here), and even my daughter liked them. Trust me, she’s a picky 16-yr-old; if she likes them, they are really good. Or maybe you love fried pickles at your favorite sports bar. Make a healthier version of them, Faux Fried Pickle Chips, in your air fryer with this great recipe from Hungry Girl (click here)! If you don’t have an air fryer, you need one. I just moved into the 21st century myself and purchased one…greatest invention ever!

Faux Fried Pickle Chips

Healthier Super Bowl Spreads. Everybody knows that for a Super Bowl Party, you need to have dips, and Hungry Girl doesn’t disappoint in this category. I’ve made several of the recipes on the site, and one of my personal favorites is in her book, Hungry Girl Clean & Hungry Obsessed. It’s called the For the Win Spinach Artichoke Dip, and the flavors are fabulous. You can purchase the book at Amazon here. In the same book, she has the Ultimate Ate-Layer Dip, a healthier version of the seven layer dip we all know and love. I highly recommend the book, and you can still order it in time to make the recipes for Super Bowl. On the website, though, she has Turkey-rific Taco Dip, a great mixture of flavors (see here), and Buff Chick Hot Wing Dip, which has been a big hit when I’ve served it. See the recipe here.

Pitcher Cocktails. I find it’s easier to make cocktails by the pitcher to save myself running back and forth to the bar. Hungry Girl has some great options for that too! The Sassy n Spiked Pink Lemonade Pitcher is a great choice…who doesn’t like spiked lemonade? See the recipe here. And I also love the Sparkling Sangria…also made in a pitcher. See the recipe here.

And don’t forget, to keep it fun but healthier, you can always serve veggies for dipping instead of chips. See in photos above that Hungry Girl has carrots, celery, and bell peppers for dipping.

Happy Super Bowl! And as Hungry Girl would say, “Chew the right thing!”

Hungry Girl Breakfast Ideas

Y’all know I’ve loved Hungry Girl for a long time, and I really love the breakfast recipes, because it can be difficult to get creative with breakfast and keep it on the healthier side at the same time. Who wants the same old thing every day? So, if you’re ready to change things up a bit in 2020 while sticking to your resolutions for the new year, read on. I’m going to tell you about some of my favorite recipes and provide links, so you can make breakfast a little more exciting at your house too. They’re great for when you have houseguests too! They’ll think you’re the most creative host ever!

Blueberry Muffin Overnight Oats. In a hurry every morning and think you don’t have time to worry about changing things up? Well, you do. Hungry Girl offers lots of recipes for overnight oats, but my personal favorite is the recipe for Blueberry Muffin Overnight Oats. It’s easy to make, and it doesn’t leave you feeling flat an hour later like waffles and pancakes do. And these have way more nutritional value than a muffin. My daddy would have said overnight oats “stick to your ribs.” With just nine ingredients, many of which you always have in your cupboard, it’s easy to throw this together the night before and stick it in the refrigerator. On your way out the next morning, just grab it and go! I love blueberries, but I also love that these oats have a little almond/cinnamon flavor. You’ll love it, and your picky-eater kids might even like it too! My picky teen loves it. See the recipe here. And see the recipes for other overnight oats here.

Breakfast Pizza Mexicali. Wanna spice up your mornings? The Hungry Girl Breakfast Pizza Mexicali will do it! It’s easy, with a prep time of just five minutes, and the cook time is only ten minutes! I prefer this one on weekends, when I have time to sit down and enjoy it. It’s a big hit with guests who like spicier foods too. I’ve had some who even added a little hot sauce! With just four ingredients (plus one optional garnish), it’s super easy to make, and it just makes me happy! See the recipe here.

Cinnamon Maple French Toast in a Mug. Sounds unhealthy, I know, but stick with me. Because this recipe is totally portion-controlled, it’s easy to stick to a lower calorie count…and no joke, it’s as delicious as it is easy. It’s basically made by adding the listed ingredients to a mug before adding the pieces of bread…then stirring and heating before garnishing. Make it for the kids, and they will think it’s a treat. Make it for yourself, and well, you’ll think it’s a treat too! If you like French Toast, this is an easy way to have it without all the calories, as each serving has just 145 calories! See the recipe here.

Healthy Superfood Breakfasts. If you want to supercharge yourself with some healthy superfood breakfast choices, these two options are easy, delicious, and super healthy! I’m listing them together, because Hungry Girl lists them together. One is the Pumpkin Pie Overnight Flax Oat Surprise, and the other is the Apple Berry Yogurt Bowl. You might think those sound like obvious choices, but Hungry Girl adds extra flavor, so you will want to make these again and again. The Pumpkin Pie Overnight Flax Oat Surprise is easy to put together and chill overnight, so you can grab and go in the morning. In fact, it’s so good, I might have it again tomorrow morning. And the Apple Berry Yogurt Bowl, while simple, is crunchy, juicy, healthy, and delicious…all in one bowl. See the recipes here.

Try a few of these recipes and let me know what you think. And while you’re at it, take a moment to sign up for Hungry Girl emails  here. And after you put in your email address, where it asks how you heard about Hungry Girl, click “Hungry Girl Ambassador,” and then enter my name, Kelly Mattei. I’d love for them to know you’re learning more about them from me!
