Moms after Christmas Day.

We made it! Moms of the world, we made it! We got through Christmas Day!

No, this doesn’t mean we don’t celebrate the real reason for the season. It doesn’t mean we aren’t grateful. It doesn’t mean we don’t enjoy the holidays. But moms, in most families, take on the lion’s share of the “burden” of making Christmas Day happen in our homes…and we wouldn’t have it any other way!

When our now-18-yr-old was ten years old, she came down with the flu on the afternoon of Christmas Eve. We were ice skating with friends, and suddenly, she wasn’t feeling well. We left immediately and went home, but when I discovered her fever kept going up after taking meds, I took her to Urgent Care just before they closed. She had flu. It was Christmas Eve. She still believed in Santa, and Santa (me) had some work to do that night!

I took her home and put her in my bed, and shortly thereafter, the nausea kicked in. We were up all night till about 6:30am, when she finally fell asleep and Santa (me) could jump into action. Fortunately, that year, I had prepared well ahead of time. I had wrapped all the Santa gifts in advance and put them in a giant black garbage bag in the game room upstairs. I sent my husband up to bring that down, and as soon as our daughter fell asleep (for a total of 30 minutes!), I dashed out to the living room and put the gifts out…just like Santa would do!

But isn’t it that way for most moms? At the holidays, we just have to find ways to make things happen. Burn the turkey? Pull out some frozen chicken pies from the freezer. Forgot to buy milk for a recipe? Call the neighbors and rush over with a cup to pour some from their refrigerator.

And invariably, we purchase and wrap all the gifts. I looked at all the beautifully-wrapped family gifts under our tree this year and realized I had wrapped every single one! Not only that, but I had also purchased every gift! I had spent countless hours shopping online and in local stores, trying to find the perfect gifts for friends and family. And the gifts were all neatly wrapped with beautiful handmade bows (I have a little talent) and placed carefully under the tree. Nope, there wasn’t a wrapped gift for me. My gift was the expensive vacation my daughter and I took right before Christmas…and it was the perfect gift for me. So every gift under the tree had been wrapped by me. And all those stocking stuffers that magically made it into the stockings? Also me. This year, somehow, I had been prepared. I had everything wrapped and ready to go a week before Christmas!

Of course, as things go, there were a few hiccups. I didn’t have time to go grocery shopping when we got back late on Christmas Eve, so on Christmas Day, we had refrigerator and cupboard surprises! Whatever was in there is what I prepared. Chicken/Bean Soup? Yum! Beer Bread? It was gone in two hours…the whole loaf! Chicken Pie from the freezer? Check! Grilled hot dogs? Yep. Chips and my fabulous Fiesta Party Dip? Everybody loved it!

There were gift hiccups too. Our daughter had opened all her wrapped gifts, and afterward, she asked, “I guess you didn’t get a chance to get the stuff from Lululemon?” Panic struck. Had I remembered? It didn’t really matter, because I know she isn’t “doing without,” but I needed to know what had happened! Had I completely forgotten? Or had I ordered it and forgotten what I had done with it? I thought I remembered ordering from Lululemon, so I said, “Let me check.” I grabbed my phone and checked my email, where I found that I had, indeed, ordered from Lululemon…and it had been delivered! I excused myself and went to the room where I had done all the gift wrapping. And there I found the package from Lululemon, still in the shipping package…just as it had arrived. I took it into the living room, where my family was waiting, and I acknowledged my error, but at least I had the goods from Lululemon! I wasn’t completely crazy! In a few minutes, our daughter asked about a necklace she had requested. Hmmm. I knew she had sent me a link. I checked the email again and found that, indeed, I had ordered the necklace. But as I read the email, I realized it wouldn’t arrive till January. Whew! In the overall scheme of things, though, the daughter would have been fine without the Lululemon stuff and the necklace. Her life wouldn’t be any different with or without them. She knows that. I’m sure she just kept expecting to find them, since she had sent me the links, just as I asked her to do. I was glad she had asked! And thankfully, at least I remembered to order them, even if I couldn’t remember what I had done with them!

Various friends dropped in throughout the day, and because I enjoy a good cocktail with friends, the Mimosas (prosecco or champagne + orange juice) and Poinsettias (prosecco or champagne + cranberry juice + a splash of Cointreau orange liqueur) started flowing pretty freely. I played bartender and brought out snacks while we all talked and laughed. We even played a silly game I found online called Merry Dissmas, and we laughed even more! And there’s nothing else I would have wanted to do. It was great fun.

Of course, between the cooking, laughing, talking, and game playing, just like most moms do, I picked up all the wrapping paper (with some help from the hubby and daughter). My husband flattened all the boxes and took them out to the garage. Since we had just returned from vacation twelve hours before we opened gifts, I unpacked suitcases and did a few loads of laundry. But I have to give my husband credit: he cleaned the kitchen really well.

And honestly, I love doing everything for Christmas Day. I love shopping. I love wrapping. I love trying to find something to please the recipients of the gifts. And just like most moms, I love doing everything I can do for my family. It’s part of what makes it a Merry Christmas for me. I hope I’ll get to keep shopping, wrapping, making bows, cooking, tending bar, and everything else for Christmas Day for many years to come.

It’s what moms do.

And on December 26, after Christmas Day is over, we rest…unless our kids are still small, and then there’s no rest for Mom.

Cooking for the family.

We have a small family…my husband, our daughter, and myself…that’s it. Yet it seems we are always going in different directions. I’m fine with that, because that means we are all still out there enjoying life. We regularly sit down together for meals, but more often than not, they’re not homecooked meals.

Go ahead. I hear it now…tsk, tsk.

I used to cook regularly, but something changed at our house. As our daughter got older, she became more picky (at least it seems that way), and my husband, well, let’s just say he doesn’t eat what I cook. It’s not that I’m a bad cook. It’s that his eating habits are different than most. And that’s OK, but I’m not preparing meals that way. If I did, I’d be preparing the same thing day after day, because that’s how he eats. Again, that’s OK, but I eat like a normal person. I eat a variety of foods. In fact, aside from organ meat, mollusks, and ocean bottom feeders, there’s very little I won’t try, and there’s very little I won’t eat. I am always trying to think of things my daughter and I will both enjoy…and I think I’m on to something.

Recently, as I browsed the produce section of the chain grocery store nearest my house, I came across something I’d never seen before, Steam It! Potatoes from Nature’s Way Farms. Yes, there’s an exclamation point there on purpose, because that’s how it appears on the front of the bag. They offer different types of potatoes you can steam in the bag in your microwave. They don’t even have to be refrigerated, so they can be stored in the pantry instead of taking up valuable refrigerator or freezer space! You can see the website for Nature’s Way Farms here.

Yesterday, I cooked a Mississippi Pot Roast in the Crockpot. If you’ve never had Mississippi Pot Roast, I highly recommend it. It’s an easy family meal that is delicious. You can see the recipe here. I know some people who add carrots and tomatoes directly to the slow cooker with their roast, but I don’t like to do that. I don’t want my potatoes to taste like meat, and I don’t want my roast to taste like potatoes. So, at mealtime, my husband had whatever he is eating this month, and I stuck the bag of red potatoes in the microwave for eight minutes and served them up with the roast for me and our daughter.

In truth, I was expecting the potatoes to be rubbery and tough, like so many things are when cooked in the microwave, but I was pleasantly surprised! They were delicious! And they were perfect with the roast, even though I think our daughter ate more of the potatoes than the roast…I’m just happy she ate something! In fact, they were so good that I could likely make a meal out of a bag of the potatoes sometime. Maybe take them out of the microwave and cut them all up, adding bacon bits, cheese, butter, maybe even some broccoli and sour cream. It would make a great meal, and it would seem like I had put forth a little effort!

I’ve already gone back to the store to purchase more of the potatoes, and this time, I got some of their steam-in-bag sweet potatoes too! I have never met a potato I didn’t like, so I’m thrilled to have found these gems! And I’m encouraging everyone I know to purchase them, so they will keep selling them in our local grocery stores!

If you’re wondering what’s for dinner at my house tonight, I don’t know what the entree will be yet, but I feel pretty sure one of the sides will be Steam It! Potatoes. Here’s a picture:

The Best Part of Weekends

The best part of weekends.

Weekends take on different meaning throughout life. I remember when I was a little girl, weekends meant going to the “candy store” on Saturday morning with Daddy after watching cartoons. As a kid, weekend nights didn’t mean much, except I might have slept over at a neighborhood friend’s house. We might have stayed up to watch Johnny Carson on The Tonight Show on a Friday night…and maybe even The Midnight Special with Wolfman Jack. When we were elementary age, my parents would drop us off at the movies on Saturday nights. They went out for date night while we watched a double feature.

As a teenager, weekend nights meant high school football games or basketball games, school dances, movie dates, or just hanging out with friends…maybe staying out till midnight at a party.

College weekends were all about the parties and sporting events…staying out till all hours. Good times.

As a parent, when my daughter was a baby, weekend nights were no different than any other night. We knew we would be up early the next morning, because our daughter woke up early. As she became a toddler, we might get a babysitter and go out to dinner with friends, but the greatest thing about weekend nights was knowing we could sleep in (a little) the next day.

As she got a little older…elementary and middle school age…she developed her own social life and had things to do on weekends. We became her own private Uber, and we were OK with that. We enjoyed taking her where she needed to go and where she wanted to go.

And then she got her driver’s license. She doesn’t need us to drive her around anymore. She goes out with friends on weekends. They go to parties. They go to sporting events. They will go to concerts now that live music is starting up again. They just go. They have a lot of fun. And when the night is over, she and her friends often have group sleepovers. Sometimes, six or eight of them will sleep at our house. And we are thrilled to have them.

The best part of Friday and Saturday nights these days is seeing all those teenage girls piling into our house after a fun night. They are always hungry when they arrive. Sometimes I order pizza, but the most fun is cooking breakfast when they come in. Last night, I had a total of six girls here, so as soon as they arrived, I asked, “Who wants breakfast?” All of them were hungry, so I scrambled a dozen eggs, cooked bacon, and made enough toast for all of them. One girl wanted grits, which was fine (I love grits too), but I told her they would have to be instant grits. I wasn’t going to cook real grits while I was trying to get everything else ready. She was fine with instant grits.

And while I cooked, they sat around the kitchen table, laughing and talking. They showed each other TikToks and talked about old times, and they laughed about things that had happened during their evening out.

I worked like a short-order cook and listened to their silly stories and their funny giggles. They asked me questions about when I was a teenager, and I told them funny things that happened. They love hearing about the 80s almost as much as I love listening to them all sit around laughing together.

I love that they are making fun teen memories, and I hope late night breakfasts at our house will be locked into their long-term memories.

Soon…in just one year…they will all be off to college. They won’t be in Charlotte on weekends anymore. My weekends won’t be filled with teenage laughter anymore. Of course, there might be weekends when some of them are in town at the same time. On those weekends, I sure hope they will have a group sleepover and let me cook them breakfast in the middle of the night while they sit around laughing.

But until then, I’m going to savor every weekend night they are here. I will continue to cook late-night breakfast for them, and I will enjoy the laughter. It’s the best part of the weekends.

A Different Mother’s Day

A Different Mother’s Day…

It’s almost here. We’ve never made a gigantic deal about Mother’s Day at our house, but we do celebrate it. My family usually goes out for brunch on Mother’s Day. We don’t do big gifts or anything, but my husband usually orders flowers or one of my favorite treats. We  normally have the freedom to make a reservation where we want to dine. But not this year.

Honestly, I look at Mother’s Day the same way my own mother used to look at it: I’m just thankful God let me be a mother to my daughter. There is no job more difficult or more rewarding. The job description is always changing, and I love it. I really do. When I was in my twenties, long before I was a mom, I thought having a child was not important to me. One of my coworkers, who had two children, once said to me, “It’s the meaning of life.” And she was right. My daughter teaches me a lot more about love and life than I teach her, I’m sure, and I love growing with her.

I always tell people motherhood gave me an opportunity to have a third childhood. My first childhood was my real childhood. Then, college was the next one. And once I had my baby, when I was 33, I got to start enjoying another childhood. She will be going off to college in a couple of years, and I’m sure I’ll enjoy that too! My neighbor, when she came over for social-distancing cocktails on the patio last week, told me and my daughter, “My daughter’s time at The University of Alabama were the best four years of my life!” She loved visiting her daughter in Tuscaloosa and got to enjoy another “childhood.” Motherhood is a great experience.

No one enjoyed motherhood more than my own mother. This is my third Mother’s Day without her in the world. I won’t cry this year like I did that first one, but I still miss her. I’ve just found ways of coping with the fact that she’s not here anymore. Lots of times, during this pandemic and isolation, I have wondered what she would have thought of it. Since she was a nurse, she would have known the importance of social distancing, but she wouldn’t have liked it. My parents were always big on “living life.” They loved the movie, Shawshank Redemption, and one of their favorite quotes from the movie was, “Get busy living, or get busy dying.”

Since this isolation started, my brother and I have speculated about what our parents would have said about the disease and the stay-at-home order. Neither of us truly knows what they would have said, but I know I would have spent a lot of time on the phone with them talking about it.

Unfortunately, I don’t have my mother. I can’t call her and ask her about it this Mother’s Day…the Mother’s Day in the age of COVID-19. If you still have your mother, think about that…once they’re gone, you can’t call your mom to ask her about a recipe or a story she told you about her life or how to handle a sick child. And I can’t ask mine what she thinks about COVID-19. I know it sounds like a little thing, but I’d love to know her thoughts on it all. In the 1950s, when she was in nursing school and studied in Louisiana for a while, she was exposed to tuberculosis and leprosy, both infectious diseases. Sure, they were infectious, but as a medical professional, she did what she needed to do to help the people. Later, when I was in elementary school, she worked for the health department and had to visit an area that reportedly had several cases of tuberculosis…a highly contagious respiratory disease. I would love to hear her opinion of the whole COVID-19 crisis….but I can’t.

This Mother’s Day will be different. That’s for sure. Because we can’t go out for brunch, we will likely cook at home. Sure, it will be different, but we will make it fun. It’s supposed to be a beautiful day, so I’m guessing my husband will cook on the grill. I’ll give him a grocery list today. Since the high is supposed to be around 70, we’ll have lunch outside. I won’t require my family to spend the whole day doting on me, but I will enjoy some time with them. Gifts? I don’t know if they will shower me with gifts, and it’s just fine if they don’t. I’m just thankful we are all healthy and can spend some time together.

This Mother’s Day, I’ll be thankful for my healthy little family. I’m thankful my own parents gave me a good life. I’m thankful for my brother and nephews…my cousins, aunts, uncles. And I’m thankful for great friends.

I’m just thankful. God bless mothers.

You should be able to find copies of the magazine in your local big box retailers like Target and Walmart, but I usually pick up a copy in my local Barnes and Noble bookstore.
  • Hungry Girl books. Honestly, I have all of them and love all of them, but my personal favorite is Hungry Girl: Simply 6, because all the recipes have six ingredients or fewer. All the recipes I’ve tried from her books have been easy, and since I’m no chef, that’s saying a lot! Pick up a copy of one or all of her books at Amazon.com here.

Game Day Snacks

It’s football season! Finally!

In North Carolina today, the sky is a little more clear, and the wind is a ever so slightly more dry. Maybe it’s a cold front moving in, or maybe I’m imagining it, but since today is National College Colors Day, I know it is officially football season.

I love all kinds of football…high school, college, professional…well, I don’t really like to watch bad, messy football (like that Florida/Miami game last week), but I will even take that over no football at all. I get it from my mother. The woman loved football. Interesting that the start of football season usually falls around her birthday. She is gone now, but I know she would be excited if she were here. In my house, you had to like football. You also had to like to watch baseball and basketball, or you were going to be watching television alone. We watched sports year round. I don’t watch baseball and basketball like I used to. I still like them, but I just don’t watch them much anymore. But football? Bring…it…on!

And with football, there are gatherings of friends and families. Where there are gatherings, there must be food. I’m not talking tailgating…that’s food on a whole different level. I’m talking football gatherings at home…like the one I’ll have this weekend when Alabama plays Duke in the Chick-Fil-A Kickoff Game. I’d normally go to that game, but my teenage daughter has big plans for the weekend, and I didn’t really want to go without her.

So here are a few of my favorites to serve at football parties at home:

  • Cheeseburger Mini Meatloaves. This is a recipe from my very favorite source, Hungry Girl. I’m an avid follower of on Instagram, and I subscribe to the emails and check the website regularly. These Cheeseburger Mini Meatloaves are simple to make and require only a few ingredients. You won’t believe you didn’t think of these yourself. I’ve served them several times, and every time, they disappear quickly, so make a few batches. See the recipe at hungry-girl.com, here.

  • Toasted Pimento Cheese Rounds. Super easy to make. Purchase a sliced French loaf at your local grocery store. Spread your favorite pimento cheese spread over the rounds. Crumble a few pieces of cooked bacon over the top. Pop into the oven at 325 degrees, and remove when cheese is bubbling. You can add a small 1/4 slice of tomato to the top or not. I prefer Palmetto Cheese brand (see it here), and I like the jalapeño pimento cheese for an added kick.

  • Veggie Dip. I love the flavor of dill in a dip, and I’ve found a great recipe for a veggie dip. It contains onions and dill, and it’s fresh and tasty. It’s just a few ingredients and super easy…but super tasty. Get the recipe here. Serve with your favorite raw veggies. I prefer carrots, broccoli, and cucumber slices.
  • Herbed Parmesan Popcorn. Popcorn is always a good snack for game days, but sometimes it’s fun with a twist. I found a recipe for Herbed Parmesan Popcorn that’s easy to make…notice a theme here?   • Seasoned almonds. My friend, Mary Ann, introduced me to some gourmet, seasoned almonds recently, and I haven’t been able to stop eating them. I think they are great to have in bowls around the room for a ball game. Made by Blue Diamond, I find them in my local Target. My favorite flavors are the Pink Himalayan Salt and the Rosemary. I like the Garlic, Herb and Olive Oil ones, but I have a feeling I will love the Black Truffle flavor too! See the Blue Diamond website here. And if you’re not up for preparing your own game day snacks, I recommend picking up from these two places:

  • Chick-Fil-A. I wrote recently about the Chick-Fil-A One app…don’t forget to use it if you pick up a tray of nuggets, chicken strips, cool wraps, mac and cheese, or cookies. And you must order in advance! I do all my ordering through the app, and I get those valuable points too! My person favorite for game day? A nugget tray with Chick-Fil-A sauce, a fruit tray, and some chocolate chip cookies. They’re always a hit. See the Chick-Fil-A website here.
  • Zoe’s Kitchen. I love Zoe’s. I discovered it when we moved our little family to Alabama for a couple of months in 2006, when my daddy was sick. Everything they offer is delicious. Their hummus tray is great for gatherings, and I love their pita trays too…a different kind of sandwich tray with a Mediterranean flavor. And if you just need some side items, I highly recommend their slaw and potato salad. See their website here.

My Favorite Brunch Recipes

Recently, I wrote about my delay in closing my mother’s estate. She passed away in December 2017, and I am just now getting around to closing it. I’ve been delaying it, because it’s depressing to think about the finality of it, but I’ve decided to look at it as a positive. I am going to host a champagne brunch to celebrate the closing…something my mother would love.

I haven’t set the date yet, but as soon as I do, I will invite some friends over for brunch to celebrate with me. I’ve already been planning the menu with some of my favorite recipes. All the recipes listed can be found online; the links are included.

  • Ham-It-Up Egg Cups. hungry-girl.com. Low in calories and high in protein, these yummy egg cups are simple to make and look cute too! Plus, they promote portion control! Your guests will rave. Get the recipe at hungry-girl.com here.

  • Hashbrown Casserole. Betty Crocker. I would go to any party if I knew hashbrown casserole was being served! This recipe is pretty easy and has a lot of flavor, but since it contains potatoes, sausage, and cheese, there is nothing low-calorie about it. Personally, I would count this as my splurge for the day and enjoy it! Get the recipe here.

  •  Biscuits. Lots of southern ladies have their mother’s biscuit recipes, and they don’t share them. I have my mother’s buttermilk biscuit recipe, but it’s a no-share item. But if you want some good southern biscuits without having to start from scratch, Mary B’s Biscuits, from the Florida Panhandle, are delicious. You can find them in the freezer section of your grocery store.

  • Fruit. You must have fruit. It’s spring, and it’s nice to have one cold item, I prefer fresh cut fruit, but I think I will make the traditional Southern Fruit Salad for my brunch. It adds a different look, and even though I never ate it when my mother served it, there must be something good about it, because it used to show up on southern tables everywhere. If you’re not from the south, you might balk at it, but try it just once! Get the recipe from Southern Living here.

  • Dessert. I love pound cake, and my cousin gave me my grandmother’s sour cream pound cake recipe a couple of years ago. I think it’s perfect for a spring brunch, and I will serve it with a macerated-berry topping from Martha Stewart. While I’m not willing to share my grandmother’s recipe, you can make a classic pound cake from the Martha Stewart website. The recipe is here. Squash It

I’m no chef. I can barely even call myself a cook.

But I love reading Hungry Girl cookbooks and magazines, and I love the website, http://www.hungrygirl.com. I’ve written about the site before. I’ve learned a lot about ways to swap high-calorie/high-carb foods for lower calorie foods over the years, and one of my favorite swaps is veggie noodles.

I was slow to buy into veggie noodles. I love my pasta.

But recently, I started to question whether it’s the pasta I like or the stuff that goes with it. Red sauce? I love it. Tomatoes? I love them. Bolognese? Yes, please! I even like Alfredo sauce, but it’s not my favorite.

So I started experimenting with some of Hungry Girl’s veggie noodle ideas. For months, I ate zucchini noodles. I didn’t buy them in the grocery store. I actually purchased the zucchini and brought it home to make my own noodles. I bought a handheld veggie spiral slicer, and I stayed busy making my own zucchini noodles. The first few times I ate them, I was so proud, and I liked them…but that changed. For some reason, the zucchini noodles just didn’t do it for me. I gave up.

Then a few weeks ago, after reading some info on Hungry Girl about spaghetti squash, I went back to the grocery store and picked up a couple of spaghetti squash. I will openly admit that I had no idea what a spaghetti squash looked like. I actually had to read the labels on the produce shelves, but I found them. They look like the gourds they are. I grabbed two and brought them home. Following instructions I found online, I cut them, cleaned them, brushed on a little olive oil and sea salt, and baked them, face down, in the oven. After I took them out of the oven and scraped the “spaghetti” out of them, I knew I had found my true veggie spaghetti love.

The difference in the zucchini and the spaghetti squash? The spaghetti squash absorbs the flavor of its pairing. The zucchini…not so much. There’s something about the texture of the zucchini that prevents it from absorbing the other flavors, but the spaghetti squash texture is perfect. It absorbs the flavor of tomatoes, onions, Alfredo sauce, red sauce, garlic…whatever I put with it! In fact, the texture of it is so perfect that I have actually fooled my teenager with it. I served it to her once with chicken, butter and sea salt, and she didn’t even realize she was eating squash instead of traditional pasta.

That is a win!

After cooking it in the oven several times, I tried cooking it in my Instant Pot. I got the directions from the Hungry Girl website here. Even before trying it, I knew it would be a little lower in calories, simply because it eliminates the need for the olive oil. I wondered how that would affect the flavor. But I wasn’t disappointed! I was thrilled! The Instant Pot method was super easy and super tasty! Hungry Girl wins again!

So now I need to get creative with the spaghetti squash. I’ve prepared it with marinara sauce, Alfredo sauce, Rotel tomatoes, and even chicken/butter. Taking a look at the Hungry Girl site, I see lots of different recipes I need to add to my repertoire. Spaghetti Squash Shrimp Scampi? Yes, please! Spaghetti Squash a la Vodka? Bring it on!
